INGREDIENTS
pizza bases 2 or bread slices as needed
beetroot steamed 2 with skin
garlic 1 clove
juice of 1/2 a lemon
olive oil 5 tbsp
salt and pepper pdr. to taste
mint leaves as needed
METHOD
brush pizza bases/ bread with some oil and bake in hot oven for 5 minutes till golden,set aside
in a blender, add the peeled and chopped beetroot, garlic, salt, pepper, lemon juice and blend
add olive oil to the grainy pulp, blend to a fine puree
check and adjust seasoning
cut pizza bases/ bread into triangles, top each piece with a spoonful of beet puree, decorate with mint leaf, add a wedge of lemon on the side
you could use the topping on a slice of pan fried potato or even cheese
