Red lentil and carrot soup

This lentil is high in protein and can be cooked quickly, making it perfect for a filling and nutritious soup. Additionally, carrots, which are low in calories and promote a feeling of fullness, can aid in weight loss, according to a study published in a magazine recently. Follow this recipe for red lentil and carrot soup:

 Ingredients

1 cup red lentils (rinsed), / masoor dal

2 carrots (diced), 

1 onion (chopped), 

2 garlic cloves (minced), 

1 tsp cumin, 

1 tsp turmeric,

4 cups vegetable broth

1 tbsp lemon juice, 

salt and pepper to taste

 

Instructions

Sauté onion, garlic, and spices in a pot for 2-3 minutes.

Add carrots, lentils, and broth, then bring to a boil.

Simmer for 20-25 minutes until lentils are tender.

Stir in lemon juice, season with salt and pepper, and serve.

Mujadara (Lebanese Lentil Rice)

 Ingredients

Wash and soak lentils in warm water for 1-2 hours. Wash and soak rice in water for 15-20 minutes.
After soaking parboil lentils in water for 8-10 minutes. Then drain water from it. Use this water further.
Drain water from the soaked rice too.
In a pan heat oil. Add sliced onions and a little salt. Fry until the onion turns brown. Keep aside.
In a pan heat oil. Add cumin seeds. Add chopped onion and a little salt. Saute until onion turns slightly brown. Add crushed garlic and saute for some time. Add drained rice and saute for 1-2 minutes.
Add lentils and saute for 1-2 minutes. Add turmeric powder, red chili powder, black pepper, roasted cumin seeds powder and salt. Mix well.
Add 2 cups of water (you can use drained water of lentils). Cover with lid and cook on low flame. When it is  cooked ans water as evaporated, add lemon juice and chopped coriander leaves. Mix gently. Cover with lid again. Switch off the flame. Keep it as it is for 10-12 minutes. Then serve.
Take lentil rice into a plate. Spread fried onions and chopped coriander leaves on it. Enjoy delicious, fulfilling lentil rice with curd and cucumber tomato salad.

1. Brown Lentils

Most grocery stores stock them, and they are a type of lentil that holds its shape very nicely once cooked. They have a mild and earthy flavor and can be used as a natural thickener when making veggie burgers or soup.

2. Green Lentils

Green lentils are another popular type of lentil found in the USA. Their flavor is slightly spicy and they have a rather firm texture. However, they do unfortunately have the lengthiest cooking time out of all the varieties (about 40 minutes). These lentils are perfect as a warm side dish or in a French-style, too.

4. Yellow Lentils

Yellow lentils are very similar to red lentils, however, they have a vibrant bright yellow color. They're nutty, sweet and only take around 15 minutes to cook. Yellow lentils are commonly used in certain Indian dishes, such as Yellow Lentil Dal with Curry.

Black lentils, also commonly known as beluga lentils, are unique black lentils that look a lot like beluga caviar. They have a rich and earthy flavor, a firm texture, and are by far the most nutritious out of all types of lentils. They make the perfect side dish to be paired with chicken or fish.
