Ingredients
½ cup boiled white beans
2 tomatoes, chopped
1 cup spinach
½ onion, chopped
2 garlic cloves, chopped
½ tsp dried oregano
1 tsp oil
1½ cups vegetable/chicken stock or water
Salt and black pepper pdr to taste
How to make it:
Sauté the onion and garlic in oil until soft. Add the tomatoes, beans, oregano and stock, then simmer for 10–15 minutes. Stir in the spinach and cook until wilted. Season with salt and black pepper and eat with a slice of wholegrain toast.
