Bisquick Peach Cobbler

 A bowl of classic Bisquick peach cobbler topped with vanilla ice cream 

Ingredients

cup Original Bisquick milk

cup milk

½ tsp nutmeg pdr

½ cup butter, melted

1(29 ounce) can sliced peaches, drained

cup sugar

 

 

Preparations

Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C).  

Stir together Bisquick mix, milk, and nutmeg in an ungreased 8x8-inch baking dish until batter is smooth. 

Stir in melted butter until blended. 

Stir together peaches and sugar in a large bowl until combined; spoon over batter. 

 Bake in the preheated oven until golden, 50 to 60 minutes.

Easy Blueberry Cobbler

 Easy Blueberry Cobbler 

Ingredients

 ½ cup butter

1cup self-rising flour

1cup white sugar

1cup milk

 cups fresh blueberries

 

Preparations

Preheat the oven to 350 degrees F (175 degrees C). Place butter in an 8-inch, square baking dish.

Melt butter in the preheating oven, about 5 minutes. Remove from oven.

Meanwhile, mix flour, sugar, and milk in a bowl until combined; pour batter over melted butter in the baking dish. Scatter blueberries over batter.

Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.

Mixed Berry Biscuit Cobbler

 Mixed Berry Biscuit Cobbler 

 

Ingredients  

4 pounds fresh/ frozen/ thawed mixed berries

 1/3 cup cornstarch
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp granulated sugar more for sprinkling
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup heavy cream
  • 1/2 cup plus 2 tbsp melted unsalted butter cooled and divided
  • 1 tbsp vinegar
  •  
  • Preparations
  •  
    Preheat oven to 375 degrees F/ 190 C.  Brush 1 tablespoon melted butter inside 13 x 9 casserole dish, set aside.  In a large bowl, combine berries, cornstarch and sugar.  If using frozen berries, make sure they are defrosted and drained.  Reserve juice for another treat like mimosas or sparkling sodas.
    Add berry mixture to prepared dish.  In a large bowl, combine flour, baking powder, sugar, salt and baking soda, whisk.  In a measuring cup, add cream 1/2 cup melted butter and vinegar, stir to combine.  Make a well in the center of dry ingredients and add wet ingredients.  Stir gently until combined, don’t over stir.
    Divide dough loosely in bowl into two sections.  Form 6 ping pong size balls, patted down on top with each half of dough.  Place biscuits evenly over surface of berries and brush with remaining butter.  Sprinkle tops of biscuits with sugar.
    Bake in oven for 35-45 minutes, or until lightly golden brown on top.  Remove and let cool for at least 30 minutes before serving.

    Peach cobbler

    Ingredients

    For the filling:

    2 pounds (910 g) yellow peaches (about 6 to 8 peaches), peeled, halved, pitted, and sliced into 1/2-inch thick wedges

    1/4 cup (60 ml) honey

    2 tbsp (30 ml) lemon juice from 1 lemon

    Large pinch of saffron threads steeped in 1 tablespoon warm water for 15 minutes

    1/4 tsp  cinnamon pdr

    1/4 tsp kosher salt; for table salt, use half as much by volume

    For the topping:

    180 g all-purpose flour (6.35 ounces; a scant 1 1/2 cups)

    150 g granulated sugar (5.3 ounces; 3/4 cup packed)

    1 1/2 tsp baking powder

    3/4 tsp  kosher salt; for table salt, use half as much by volume

    10 tbsp (135 g) unsalted butter, melted, plus more for greasing

    1/3 cup (80 ml) whole milk

    Vanilla ice cream, to serve

     

    Directions

    Adjust oven rack to middle position and preheat the oven to 350°F (175°C). Grease an 8-inch square or 9-inch round cake pan with cooking spray.  

    For the filling: In a large bowl, combine peaches, honey, lemon juice, soaked saffron and its water, cinnamon, and salt. Transfer to prepared pan.  

    For the topping: In a large bowl, whisk together flour, sugar, baking powder, and salt. Add melted butter and use rubber spatula to mix with dry ingredients. Add milk and stir until a uniform dough comes together. 

    Drop spoonfuls of biscuit topping all over peaches, smoothing with a spatula to avoid any overly thick sections and mostly covering the fruit (though a few gaps and cracks are fine). Leave a small opening in the center. 

    Bake until peaches are tender and the topping is light golden brown, fully cooked through, and feels springy to the touch (a cake tester should come out clean when inserted into a biscuit near the center of the baking dish), 40 to 45 minutes longer. 

    Let cobbler rest on a wire rack at least 30 minutes or up to 6 hours. Serve warm or at room temperature with ice cream or whipped cream. 

     

    Notes

    Other stone fruits such as nectarines, plums, apricots, or pluots can be substituted for the peaches in this recipe.

    Strawberry Cobbler

       

    Ingredients:

    Filling:

    800 gm strawberries

    2/3 cup sugar (about 100-150 gm based on sweetness preferred)

    2 tbsp cornstarch

    2 tsp fresh lemon juice 

    1/4 tsp salt

     

    Topping:

    2 cups all purpose flour

    1 1/2 tsp baking pdr

    1/2 tsp baking soda

    1/4 tsp salt

    10 tbsp butter (cold and cut into cubes) 

    3/4 cup plain buttermilk

    2 tsp sugar powdered

     

    Method:

    Preheat the oven to 400°F / 220 C

    Set aside an oven rack. Grease and layer baking paper on a 12×12 or 9×13-inch baking pan.

    Clean and pat dry the strawberries. Make sure they are dried well. Cut them into halves. You can cut the bigger ones into 4.

    Take a medium bowl, and toss in the strawberries with the sugar, cornstarch, salt and lemon juice. Spread the filling evenly in the prepared baking pan.

    Take a medium bowl, sieve the flour, and mix it with sugar, baking powder, soda, and salt.

    Add the cold butter pieces and blend them into the flour mixture using your fingertips or a pastry blender till the mix turns into a crumb-like form.

    Add buttermilk and stir gently until the dough is combined; do not knead as the biscuits might become flat and lose texture.

    Form small dough balls flatten them gently into 1-inch shapes and arrange them on top of the strawberry filling in the tray. If the dough is too mushy, you can just lay it out on parchment paper, roll it flat gently and then flip the paper with the dough onto the strawberry filling. Then remove the parchment paper on top.

    Sprinkle the powdered sugar on top.

    Bake the cobbler for 20 minutes. The biscuits need to turn golden on top and the strawberry filling has to bubble.

    Do a quick check on the biscuit after 20 minutes by gently lifting a piece and seeing if it has cooked through using a toothpick or a knife. You can further bake it for 5-10 minutes as required.

    Let the cobbler rest for 10-15 minutes.

    Serve it warm with a scoop of vanilla or butterscotch ice cream. You can also top it with fresh whipped cream while serving.

    Peach Cobbler

    INGREDIENTS

    1 stick (1/2 cup) unsalted butter
    1 ½ cups sugar (divided)
    2 cups flour
    1 ½ tsp baking powder
    ½ tsp salt
    1 cup milk
    1 tbsp vanilla essence
    1 (29 ounce) can sliced peaches in juice
    1 tsp ground cinnamon
    ¼ tsp ground nutmeg

    METHOD

    Preheat over to 350°F.  Butter a 9x13 baking dish (or 2-8x8 baking dishes).  Set aside. 

    Place butter in a medium size microwave safe mixing bowl.  Heat butter in microwave until melted.  Add 1 cup sugar, flour, baking powder, salt and whisk to combine.  Add milk and vanilla, whisk until combined.  Pour batter into prepared baking dish.  Spoon peaches over top of batter, placing them evening around the pan.  Reserve the juice from the can. 

    Add ½ cup sugar, cinnamon and nutmeg to the juice.  Whisk to combine.  Pour juice over peaches.

    Bake 55-60 minutes until golden brown.

    BERRIES COBBLER

    INGREDIENTS
    Filling
    4 peaches, sliced
    1 1/2 cup blueberries or blackberries (or a mix of both)
    1/3 cup sugar
    Juice of 1  lemon
    2 tbsp spiced rum / rum essence

    Batter
    1/4 cup butter
    3/4 cup all-purpose flour
    1/2 cup almond flour or you can powder almonds to use.
    2 tsp baking powder
    1/4 tsp salt
    1/3 cup sugar
    rind of 1  lemon
    1 1/4 cups low-fat milk

    METHOD
    Preheat the oven to 180°C. 
    In a large bowl mix peaches and berries with sugar, lemon juice and rum. Set aside.
     Melt butter in a baking dish in the oven. 
    Mix flour, almond flour, baking powder, salt and sugar until well-combined. 
    Stir in lemon zest and milk. The batter should be watery.
    Pour batter into baking dish over melted butter. Do not mix. Top with the fruit, spreading it gently over the top. Again, do not mix.
    Return pan to the oven and bake for one hour until cobbler is golden brown and bubbly. 
    Let it cool a bit before serving warm, or chill and serve cold.
