Stuffed idli, no grinding !

 This idli is quick, filling, as it requires no soaking OR grinding, OR fermenting. 

Ingredients and Preparations 

 Rava 1 cup

curd 1 cup

water 1 cup mix well rest for 15 minutes
heat 2 tbsp oil, 
add 1/2 tsp mustard seeds
2 tsp chana dal, 
2 tsp urad dal, 
hing little
onion 1 finely chopped, 
ginger-garlic paste 1/.2 tbsp
green chili 1 finely chopped,
coriander pdr 1/2 tsp
red chili pdr 1/2 tsp
turmeric pdr 1/4 tsp
fry well, add 2 boiled mashed potatoes, salt to taste, coriander leaves 1-2 tbsp finely chopped mix well.
cool, roll into long oval shape, the size to fit into a glass
mix rava batter well, add 1/2 tsp salt 1/4 tsp baking soda mix well
grease 4 glasses well, pour 1 1/2 tbsp batter, keep the rolled masala in, cover with batter, steam for 15 minutes, remove, cool slightly, remove the edges with knife
in a pan heat 1 tsp oil,
add little turmeric pdr, 
chili pdr,
salt little, 
coriander leaves chopped little, 
fry the prepared rolls well, 
serve hot with chutney

Sabudana Seekh Kabab

 Ingredients

2 Cups mashed potatoes, boiled

1 cup soft sabudana (sago), soaked

5 tbsp groundnut powder, roasted

2 tsp curd

4-5 red chili, finely chopped

2 tbsp rajgira/ Amaranth flour

Salt to taste

1/2 tsp sugar (optional)

Oil or ghee

1/2 cup coriander leaves (optional), chopped

Method

Add boiled and mashed potatoes together with sabudana.

Mix with roasted groundnut powder, curd, finely chopped red chili, chopped coriander leaves, rajgira flour, salt and a pinch of sugar.

Knead lightly to form soft dough.

Add the dough onto the skewers or seekh and grill at high heat.

Brush over with ghee. Cook until evenly browned.

Serve hot with any chutney.

Ragi Cutlet


 

Preparations

Finely chop the onion and grate the carrot. Collect them in a bowl. Now peel the boiled potato and mash it roughly. Mix the mashed potato with the chopped veggies.

Now add ragi flour, salt, red chili powder, coriander powder, garam masala and garlic paste. Mix well to prepare a thick mixture. Add 3-4 tbsp water and again mix well.

Place the breadcrumbs in a plate. Make small cutlets from the mixture and roll them in breadcrumbs. Ensure that the cutlets are properly coated.

Heat oil in a pan and place the cutlets in it. Shallow fry the cutlets until golden brown from all sides.

Serve the cutlets with mint chutney or tomato ketchup.

Tips
  1. You can add spices as per taste you make the cutlets more delicious as per your taste buds.
  2. You can also air-fry the cutlets and add more veggies to make them more nutritious

Club kachori

INGREDIENTS 


For The Dough:

All Purpose Flour  1 cup

Semolina  ¼ cup

2-3  tbsp Ghee

 Salt to taste

 Water as needed for kneading

 

The Filling:

Medium Sized Potatoes, Boiled And Mashed  1Cup

cumin Seeds ½ tsp

Ginger Garlic Paste 1 tsp

Green Chilies   2-3 Chopped or to taste

Turmeric Powder ½ tsp

Red Chili Powder to taste

Salt to taste

 

Oil For Deep Frying

Tamarind Chutney And Green Chutney For Serving

 

Cooking Directions

.Prepare the dough by mixing all-purpose flour, semolina, ghee, and salt. Rest the dough for 30 minutes.

 

.For the filling, cook mashed potatoes with spices, green chilies, and ginger-garlic paste.

 

.Divide the dough into small balls and roll them into small discs. Place a spoonful of filling in the center and seal the edges.

 

Deep fry the kachoris until golden brown and crispy.

 

.Serve hot with tamarind chutney and green chutney.

 

Cooking Tips

·        Make sure the oil is hot enough before frying the kachoris to ensure they turn out crispy.

·        You can add roasted cumin powder and amchur (dry mango powder) to the filling for extra flavor.

·        Serve the kachoris immediately after frying for the best taste and texture.
