Egg-less, Sugar-less almond cake baked over gas

Ingredients and Prep

Milk 1 ¼ cups in a pan, add

Seedless dates 1/3 cup

Cook on medium heat till dates are soft , cool and blend well , keep it aside

In a dry blender pdr ½ cup almonds o a fine pdr, keep it aside

In a big bowl add ¾ cup atta,

Baking pdr 1 tsp

Baking soda ¼ tsp

Add the almond flour, give a good mix

Then add milk mixture

Vanilla 1 tsp, mix all well.

Line in parchment like cake pan, tap  few times, smooth top

Sprinkle some slivered  almond

Preheat a pan for 10-15 minutes, on low heat with its lid.

Place the cake pan, let it bake for 55-60 minutes on low heat covered.

You'ld be able to bake in an oven @ 180 C for 15-20 minutes, depending on the size of your oven.

GUR PAPDI / Sukhdi

Ingredients

  • 1 cup whole wheat flour/atta
  • ½ cup powdered/grated jaggery (unrefined cane sugar)
  • ½ cup ghee/clarified butter
  • ¼ tsp powdered green cardamoms/elaichi
  • 2 tbsp of white sesame seeds, lightly roasted
  • 2 tbsp slivered almonds

Instructions

  1. Grease a tray with melted ghee/oil and keep aside.
  2. In a large deep saucepan/kadai, heat ghee until just melted.
  3. Stir in the atta/whole wheat flour and cook/roast/fry on medium low heat, stirring continuously.
  4. Keep mixing and stirring until the flour starts to turn slightly dark and you get a nice aroma.
  5. Initially, when you add the flour and mix, the mixture will be like a thick liquid. As you continue to fry it, you will notice that it starts to thicken and then after it has roasted/fried well, it will loosen up again and will start to look like a liquid again. This took me about 14 minutes.
  6. At this stage, remove from heat and keep on a trivet. Keep stirring the mixture as the pan is still hot and the flour may burn at the bottom.
  7. Once the mixture is slightly cool, add the cardamom powder, roasted sesame seeds and powdered/grated jaggery and mix well with a spatula/spoon to combine well.
  8. As soon as you see the jaggery has completely melted and has combined, immediately pour the mixture into the greased pan.
  9. Smooth the top with a flat spatula or greased metal spatula or flat-bottomed bowl.
  10. Immediately, sprinkle more sesame seeds and slivered almonds and press gently to embed them into the soft burfi.
  11. While the burfi is still warm, make cuts into desired shapes. Let cool completely and serve the delicious healthy gur papdi.

Notes

Addition of cardamom powder and sesame seeds is optional.

Instead of almonds, you can use any other nut that you prefer.

Try not to burn the flour while roasting.

Cut into desired shapes while still warm as it may be difficult once they set.

Horlicks Milk Powder Burfi/Fudge

 Ingredients

  • ¼ cup milk
  • ¼ cup ghee
  • ¼ cup sugar
  • ¼ cup Horlicks
  • 1 cup milk powder
  • Few strands saffron
  • ½ tsp cardamom powder
  • 1/4 cup slivered almonds

Instructions

  1. Butter a baking pan or tray with ghee and keep aside.
  2. In a deep saucepan, heat milk, ghee and sugar on medium heat until sugar melts.
  3. Once the sugar has melted, add the rest of the ingredients: Horlicks powder, milk powder, saffron, cardamom powder and half the almonds.
  4. Keep stirring continuously as you add; do not let go; this burfi sets in just 2 to 3 minutes!
  5. As soon as the mixture is homogeneous, forms a lump and leaves the sides of the pan, remove from pan and spread in prepared pan or tray/ plate.
  6. Spread evenly with a greased spatula or with a the bottom of a bowl which is greased.
  7. Sprinkle the rest of the nuts and press into the burfi.
  8. Set aside to cool and set completely. Cut into desired shapes with a sharp knife and serve.
  9. Enjoy!!!

Notes

You can double the recipe to get 24 pieces.

Instead of almonds, you can use your favorite kind of nuts or leave them off altogether.

Make sure to not to move away from the stove as this amazing burfi or fudge comes together in just 5 minutes!

Badam Halwa with Almond Flour

 Ingredients 

1 tbsp Whole Milk

1 pinch saffron strands

1/3 cup ghee, divided, melted

1 cup almond flour

1 cup Whole Milk

1/2 cup granulated sugar, use 75 grams for a less sweeter halwa

1/4 tsp cardamom pdr

2 tbsp almonds or pistas slivered to garnish 

 

Instructions 

In a tbsp warm milk soak crushed saffron strands, can be microwaved for 30 seconds

Stovetop Method

  • In a heavy bottom pot, heat ghee on medium flame.
  • Reduce to low heat. Add almond flour and sauté till the raw smell of the almond flour disappears and the almond flour starts to turn golden in color. Stir continuously to avoid burning. Total it will take about 10 minutes.
  • Now add milk and mix continuously so that there are no lumps. Cook for another 5-6 minutes till the almond flour soaks all the milk.
  • Add sugar, saffron milk, cardamom powder and stir well. Halwa loosens and then saute to thicken it again.
  • Cook till the halwa thickens and ghee leaves sides of the pan in about 6-7 minutes.
  • Almond Flour Halwa thickens as it cools. Once you have the right consistency take it out in a serving bowl. Do not leave in the pan as it can overcook and get chewy.
  • Serve badam halwa warm, garnished with slivered pistachios or almonds.

Notes

  • Use almond flour for this recipe. Almond meal is not as fine, and won’t make a smooth halwa. 
  • For melt in the mouth halwa, the right amount of ghee is important. Hence I suggest to use the amounts mentioned in the recipe.
