Lime Coconut Mug Cake

 6 Delicious Mug Cake Recipes

Ingredients: 
 
4 tbsp all purpose flour  
 
1/4 tsp baking powder  
 
2 and a half tbsp granulated sugar  
 
4 tbsp full fat coconut milk  
 
1 tbsp coconut flakes  
 
1/4 tbsp lime zest 
 
Instructions:  
 
Combine all the ingredients in a large mug, excluding the lime zest and coconut flakes.  
 
Stir with a small whisk or fork until the mixture is smooth. Ensure that you mix in all the flour, it is prone to sticking to the side of the mug.  
 
Lightly mix in the coconut flakes and lime zest. 
 
Microwave for about 1 minute. The top of the cake should be dry and look finished.
 
If it isn't, continue to microwave in 5 or 10 second intervals.  
 
Sprinkle additional lime zest on top and it's ready for tasting.

Avocado Stuffed Burger

Ingredients (Serves 3-4)  
 
2 pounds ground beef (preferably grass-fed) Vegetarians can use soya granules soaked in hot water, drained, mixed with onion, green chilies chopped as per taste, you can add some finely grated carrots, 1 big boiled, peeled and mashed potato to make a burger as shown below.
 
2 avocados, ripe 
 
1 cup sun-dried tomatoes, chopped (no oil) 
 
Juice of 1/2 a lemon
 
Zest of 1 lemon 
 
1 tbsp. black pepper 
 
2 tsp. sea salt (makes it salty depending on your sun-dried tomatoes) 
 
 oil / butter to grill burger
 

Directions: 
 
Preheat your grill or broiler to medium/medium-high heat. 
 
Meanwhile, in a large mixing bowl, combine the ground beef and black pepper with 1 tsp. sea salt and the zest of 1 lemon. Mix the ingredients well, using your hands, forming them into thin patties. The patties need to be thin, as two will be used to make one burger, as you'll see in the next step. 
 
Then, in another bowl, combine the avocados, sun-dried tomatoes, lemon juice and remaining salt. Mash until all the ingredients are fairly smooth. 
 
Add the avocado mixture to one patty, leaving enough room to seal without it leaking out. Place the other patty on top and seal the burgers together. 
 
Grill the burgers to your liking, ensuring that they are cooked evenly on both sides. While grilling, drizzle some oil/ butter if desired. 
 
Prior to serving, allow the burgers to rest for 10 minutes, then use the rest of your avocado mixture on top.
