Matte Ke Aloo ( Potatoes in Buttermilk gravy)

Matthe ke aloo 

Ingredients

1 litre mattha (buttermilk)

250 grams boiled potatoes

5-6 green chillies, slit

1 tsp grated ginger

1 tsp cumin seeds

1 bay leaf

1 black cardamom

4-5 whole black pepper

2 whole red chillies

1/2 tsp red chilli powder

1/2 tsp turmeric powder

1 tsp coriander powder

1/2 tsp black salt

Salt to taste

1 tbsp roasted kasturi methi

1 tbsp fresh coriander leaves, chopped

Directions

1. Cook The Whole Spices

Heat mustard oil in a pan and add cumin seeds along with the bay leaf, cardamom, pepper and other whole spices. Once they start crackling, add whole red chillies, grated ginger and slit green chillies. Cook them on a low flame for about 2 minutes.

2. Cook The Powdered Spices

In a small bowl, mix the powdered spices with 2-3 teaspoons of water to form a paste. Add this paste to the pan once the whole spices are ready. Cook on low flame and stir carefully to avoid burning. If needed, switch off the flame while stirring to prevent the spices from sticking.

3. Add The Potatoes

After 2 minutes, add the boiled and lightly mashed potatoes. Mix well with the masala, adding a little water so that the flavours coat the potatoes evenly.

4. Add The Buttermilk

Keep the flame low and slowly pour in the buttermilk, stirring continuously so it blends smoothly with the potato and spice mix. Cook gently on low flame until the colour of the curry changes.

5. Season And Finish

When the curry begins to boil, add both black salt and regular salt. Stir in roasted kasuri methi and fresh coriander leaves. Allow the curry to simmer for a few minutes until it reaches the desired consistency.

Kalan / Yam in coconut gravy

 

Ingredients:

For Tempering:

First, wash and clean the yam and add turmeric, salt, and black pepper to it. Now add this to a pan and add just enough water to cover the yams (you may even add plantains if you like). Cover the pan with a lid and on a low flame allow the yam to cook until it is tender.
While the yams cook, make a coconut paste, by adding fresh coconut, green chilies, cumin and little water to a blender. Grind until you get a smooth paste.
Transfer the curd to a big bowl and whisk the curd to get a smooth consistency.
Once the yams are cooked make sure there is little or no water left in the pan. In the same pan, add the coconut paste and stir, then add the smooth curd and stir some more. If the gravy gets too thick to handle, add very little amount of water to it.
Take a tempering pan and heat some oil in it. Add the fenugreek seeds and allow them to darken slightly. Now add the mustard seeds. Once the seeds crackle, add the curry leaves and add the dry chillies as well.
Finally, add the coconut to the tempering and allow it to turn lightly golden.
Pour the tempering into the Kalan and mix very well.
Serve this Kalan with hot steamed rice and enjoy.

Masoor dal spinach dosa

  

Ingredients For the Batter

  • 1 cup Red Lentils dry; provides structure and protein.
  • 2 cups Water for soaking.
  • 1 cup Water for blending.
  • 2 cups Fresh Spinach packed; adds nutrition and color.
  • ¼ cup Nutritional Yeast optional; introduces a cheesy flavor.
  • 1 tsp Cumin Powder.
  • ½ tsp Garlic Powder or 2 cloves garlic finely chopped
  •  tsp  Onion Powder Or onion finely chopped .
  • Salt or to taste; 
  • ¼ tsp  Black Pepper  or grind 2-3 green chilies along with dal
  • Oil for cooking.
  •  
  • Preparations
    1. Rinse red lentils thoroughly under cold water to remove impurities, then soak in 2 cups of water for at least 2 hours.
    2. Drain the soaked lentils and blend with 2 cups of fresh spinach, 1 cup of water, and spices until completely smooth. 
    3. Rest the batter for about 15-30 minutes.
    4. Preheat a non-stick skillet over medium heat and lightly grease it with oil.
    5. Pour an appropriate amount of batter into the skillet, aiming for a crepe-like thickness.
    6. Cook the flatbread for 3-4 minutes until edges look set and bottom is lightly golden, then flip and cook for an additional 2-3 minutes.
    7. Repeat the process with the remaining batter, keeping cooked dosa  warm under a clean towel. Serve hot with coconut / tomato chutney.

Turmeric Latte

Ingredients

 

Preparations

In a saucepan, place the milk on low heat, add the sugar (if adding honey, do so just before serving) turmeric powder, and ginger and heat for a minute.
Now add a pinch of pepper and mix well.
Remove from heat, using a strainer, strain the latte.
Transfer to the serving mug and add a pinch of cinnamon to garnish. Enjoy hot.

Lemon- Pepper seasoning Mix

This seasoning mix can work for almost any kind of dish whether it’s a salad, fish, or chicken. Preparation is very simple, and the ingredients are 100% natural.

Ingredients:  
 
Zest from 5 lemons  
 
⅓ cup black pepper (whole)  
 
¼ cup salt (optional) 
 
Preparation: 
1. In a bowl, mix the zest and black pepper. 
2. Line an oven tray with a baking sheet and spread the mix on top of it. 
3. Bake the mixture for about an hour at 150°C (300°F), until the zest is completely dry. To make certain that the whole tray bakes evenly, remove it from the oven after 30 minutes and give it a shake, and then place it back in the oven. 
4. Grind the pepper-zest mix in a food processor or a coffee grinder
5. Once the mixture is ready, you can add salt if you wish.

Raw Corn Salad With Shiso and Basil

Ingredients

For the Salad:

3 cups fresh corn kernels, cut from 3 to 4 cobs

2 cups grape tomatoes, halved

6 to 8 medium red radishes, halved and thinly sliced

1 large cucumber, sliced

1 medium shallot, finely sliced

3 ounces feta cheese, crumbled

1/4 cup loosely packed shiso leaves finely chopped, plus leaves for garnish

shiso leaves, its  curry-like flavor and touches of cumin, cilantro, parsley, mint, and cinnamon; red shiso with its sweeter start that turns into a cinnamon-mint taste; and mixed shiso that allows you to enjoy the best of both.
 
1/4 cup loosely packed basil leaves, finely chopped, plus leaves for garnish

For the Dressing:

2 tbsp balsamic vinegar

1 tbsp extra-virgin olive oil

2 tsp Dijon mustard

Kosher salt and freshly ground black pepper

Directions

For the Salad: Combine corn, tomatoes, radishes, cucumber, shallot, feta cheese, and herbs in a large bowl. Toss gently to combine. 

For the Dressing: Combine balsamic vinegar, olive oil, and Dijon mustard in a small bowl or sealable container. Whisk well or seal the container and shake vigorously until dressing is smooth and emulsified. Season with salt and pepper, blend again, and pour over salad. Toss until ingredients are evenly coated, then serve right away, garnishing with shiso and basil leaves.

Marinated Mozzarella, Cherry Tomato, and Basil Salad

 Marinated mozzarella, cherry tomato, and basil salad inside a dish 

 

Ingredients

1/4 cup extra-virgin olive oil
 
1/4 cup chopped fresh basil leaves
 
1 pound ciliegine mozzarella (cherry-size mozzarella balls)
 
Kosher salt and freshly ground black pepper, to taste
 
1 pint/ 12 ounces/ 340 gm cherry or grape tomatoes
 
3 tbsp balsamic vinegar (regular, white, or golden)
 
 
Directions
Combine oil and basil in a bowl. Add the mozzarella and season to taste with salt and pepper. Cover and let marinate at room temperature for at least 30 minutes. 

Add tomatoes and vinegar to the mozzarella and toss to combine. Season to taste with more salt and pepper if desired, and serve immediately. 

Notes

We recommend marinating this salad at room temperature as storing it in the fridge will cause the mozzarella to firm up.

Mango-Turmeric Smoothie

 This Mango Turmeric Smoothie is so much healthier than it tastes. 

Ingredients

1 cup plain kefir / Greek yogurt / whole milk yogurt
 
¾ cup bottled coconut water or tap water
 
1 ½ cups frozen mango chunks (from a 12-ounce package)
 
1 cup frozen, very ripe banana slices (from 1 banana)
 
¼ tsp ground turmeric
 
Pinch of freshly ground black pepper
 
Pinch of kosher salt

Directions

Combine all ingredients in a blender, starting with kefir and coconut water. Process until smooth, about 1 minute.

Urad dal and Pepper rice.

Ingredients
 
1 & ½ cup Basmati rice
 
¼ cup Kopra/ dessicated coconut - ¼ cup

 Dry roast

¼ cup Urad dal

1 tsp Black pepper

To temper

2 tbsp Oil

1 tbsp ghee

½ tsp Mustard seeds

2 tsp Urad dal

2 tsp Chana dal

Asafoetida/ hing 1/4 tsp

3 Dry red chilies

Cashews chopped 2 tbsp

Curry leaves finely chopped 1 tsp

 

Preparations

Wash and soak basmati rice for 10 mins. Pressure cook with 2 cups of water for 3-4 whistles.

Once done, cool down in a broad vessel. Add 2 teaspoon sesame oil for easy separation of grains.

In a pan, dry roast urad dal in medium flame until slightly golden. Keep aside.

Dry roast black pepper until it starts to pop.

Roast coconut until fragrant on medium flame stirring continuously.

Grind urad dal and black pepper coarsely.

Heat a broad pan with oil, ghee. Splutter mustard, add urad dal, channa dal, red chilies, cashew and asafoetida. Once cashews are golden, add curry leaves.

Add cooked rice (cooled, separated grains), salt and mix gently along with the coconut,powdered dal and spices.

Serve with boondi raita, some vegetables and papad to complete the meal.
