Bajra Onion Dosa

 Ingredients roughly 5 small size dosas

bajra 1 serving spoon/ 2 tbsp

arhar dal  1 tbsp

urad dal 1 tbsp

rice flour  1/4 cup approximately OR raw rice 

green chilies 1-2

ginger 1 " chopped

onion chopped 1 small or 2-3 tbsp

curry leaves finely chopped

salt to taste 

 

Preparations

I washed the 1st 3 ingredients well, soaked in warm water, if using rice, soak it along with the rest of the ingredients

while grinding,  add green chilies, ginger, curry leaves, grind with little water to a smooth batter

remove the batter in a bowl, as I used rice flour, in little rice flour, I mixed with little batter well, mixed rest of the batter, add salt, finely chopped onion.

heat tawa, make dosa like you normally make, cook on medium flame till brown on both sides.

you can have it with milagai podi, chutney, sambar, choice is yours.

Have it hot.This was my meal for the day, as on Saturdays, I've one meal, was contemplating what to make avil upma, or akki roti, then decided to do this soaked the ingredients in hot water for roughly 3 hours and ground to a smooth batter. Had it hot with milagai podi.

NOTE- you can add more dal, add chana dal too, only thing to remember add raw rice to grind, roughly equal to other ingredients, or add rice flour if you've.

There's no hard and fast rule about the quantity of each ingredients, like we do for addai.  I had ordered bajra flour, without looking if it was bajra flour/ bajra, I just kept it in my store. When I wanted to make roti with bajra flour, realised that it was whole bajra, half gave to my maid to use. Thought let me try making onion dosa with it, it was quite good, as I was making had it with my home-made milaai podi

Bajra-rice- green moong dosa




ready to eat bajra dosa

 Yesterday, as I decided to eat at home, soaked bajra, rice to make dosa. When I was about to grind decided that I'ld add some green moong dal too. Added some ragi/ finger millet flour too to make it healthy.

Ingredients

bajra 1/4 cup

rice 2 tbsp

green moong 1 tbsp

green chilies 2

ginger 1" chopped

curry leaves finely chopped a handful

salt to taste

oil to cook 

Preparations

wash and soak bajra and green moong also for about 4 -5 hours.

grind with green chilies. ginger to a smooth batter adding water as needed

I added salt, ragi flour about 3 tbsp  mixed well. 

I covered and let it ferment for about  6 hours as I wanted to make it for my dinner

Had 2 dosas with curd mixed with milagai podi

Healthy protein rich, calcium, Vitamin E, fiber rich dosa.

Pearl Millet Porridge (Sweet/Salty)

 Start your day with a nourishing and comforting Pearl Millet Porridge, which can be enjoyed in both sweet and savoury variations:

  • Sweet: 1 cup pearl millet (bajra), cooked with 3 cups milk, 2 tbsp sugar or jaggery and 1/2 tsp cardamom powder until thickened (about 15-20 minutes). Serve warm, garnished with chopped nuts or raisins if desired.
  • Savoury: 1 cup pearl millet (bajra), cooked with 3 cups water and 1/2 tsp salt.Add 1 cup chopped spinach or grated carrots for extra nutrition and cook for an additional 5 minutes. Serve warm, drizzled with ghee or topped with roasted seeds.

Pearl Millet- Bajra Pancakes / chilla

 I had ordered for barley, thought the correct item was delivered, without checking, put it away. As I soak about a tablespoon of barley overnight and drink it each morning, as it helps to take care of kidneys. Last night, when I went to open the packet, was surprised it wasn't barley but bajra !

Millets are supposed to be healthier than rice. So, decided to make chilla/ pancake, as on Saturday and Tuesday, I eat just one meal- either kanji, cereal/ toast, at night some fruits. Today decided to wash and soak pearl millet, ground it along with green chili, added some besan, seasoned it and made my pancakes !

Ingredients

pearl millets/ bajra roughly 30 gm

besan / chickpea flour 2 tbsp- protein

salt to taste

green chilies to taste- Vit. C

onion 1 small chopped fine- anti-cancer

ginger 1" chopped fine- aids digestion

coriander leaves 1 tbsp chopped fine- Vit. C

curry leaves 1 sprigs chopped fine - Vit. E

oil to make pancakes/ chilla- fat needed to absorb fat soluble vitamins

 

Method

soaked millets after washing it well for about 4 hours, then I added 1 green chili, as the chilies here are very sharp, wanted to add some ginger, forgot that , ground to a fine paste

removed the batter in a bowl, added salt to taste, onion, curry leaves, coriander leaves, besan, mixed well.

heated a tawa, once hot smeared little oil, spread 2 tbsp of the batter , drizzled little oil all around, made small holes 4 in the middle, put little oil, cooked on medium flame till crisp on both sides.

as soon as I made the first one, was so hungry, just ate it with some mint chutney while the 2nd was cooking. This was around 1, as since morning I had only tea. So couldn't take photo, 

I ate 2 pancakes was quite full, as they're about 5" round.

As I'm low on protein, I had soaked some whole green moong, pressure cooked it for 4 whistles.

Drained the dal, drank the excess water, as it is like clear soup, chopped 2 tbsp of cucumber,1 small tomato, added to the cooked moong with salt for my protein for the day.

I feel lighter and better eating less.

PANEER OR COTTAGE CHEESE CHEELA OR PANCAKE

INGREDIENTS

bajra atta/ wheat flour   1 cup
grated paneer/ cottage cheese   1 cup
onion finely chopped   2
coriander leaves finely chopped a bunch
pepper pdr.   1/2 tsp or to taste
chaat masala pdr.   1 tsp
salt to taste
oil for cooking
green chillies finely chopped  2 or to taste

METHOD

mix chopped onion, green chillies, pepper, chaat masala, salt in flour
add approximately  1 cup of water to make a smooth batter
in a nin-stick frying pan, put 1 teaspoon of oil, spread a ladle of batter, add some grated paneer on it, cover and cook on low flame for 2 minutes'
remove lid, saute it, sprinkle some more oil on the sides, cook for some more time
remove once crisp, serve hot with chutney or pickle and raita or spiced curd.

Bajra Pongal/ kichdi

INGREDIENTS

broken bajra  1 cup
ghee as needed
moong dal  1/2 cup
water 3 cups
nuts as needed
cumin 1 tsp
peppercorn crushed  1/4 tsp
curry leaves few
salt to taste

METHOD

Roast a cup of broken bajra in a pan with two tablespoons of ghee.

Add it to half a cup of green gram dal.

Add three cups of water and pressure cook both together with salt.

The final mixture will look gooey and thick.

Now roast some cut pieces of almond and cashew in a spoon of ghee with cumin seeds, pepper corn and a few curry leaves.

Add the bajra mixture to it and stir for a few seconds before lifting it off the fire.

Serve with mint chutney.

MILLET STEW

Ingredients
1/2 cup millet grains (bajra/ragi)
1/2 tsp sea salt
1 small onion, finely chopped
5 small garlic pods, kept unpeeled
2 tsp dried mint leaves
1 1/2 cups water
Method
Place all ingredients in a medium-sized pan with 1 1/2 cups of water over high heat and bring to a boil.
Cover pan, reduce heat to low and cook for about 30 minutes, till millet grains have absorbed all the moisture and are tender. It's a good idea to check it after 20 minutes, as sometimes the millet cooks faster.
Or you may cook it in pressure cooker, with 11/2 cup of water for 2 whistles, as that will save time, no tension.

MASALA PURI

INGREDIENTS

bajra flour  1 cup
besan  1/2 cup
wheat flour   1/2 cup
pepper powder   1/2 tsp
chilli pdr.   1/2- 1 tsp. as per taste
salt to taste
turmeric pdr.  1/4 tsp
asafoetida  1/4 tsp
carom seeds/ ajwain/ omam    1 tsp
water to make soft dough
oil for frying

METHOD

mix all the flours, spices well, then add water little by little to make soft dough
heat oil, grease your palm, then take dough, flatten the puris in your palm not too thin, if not , you can use the rolling pin to do so.
fry the puris till brown on both sides, drain well.
serve hot with raita, any green chutney, pickle of your choice.

MIXED DAL MUTHIAS

INGREDIENTS
bajra      1 cup
arhar/ tuvar dal       1/3 cup
chana dal       1/3 cup
udad dal        1/3 cup
sour curds      1/3 cup
oil as needed for shaloow frying
green chillies   7 or to taste
ginger 1"
cumin  & coriander pdr.   2 tsp
turmeric pdr   1/4 tsp
curry leaves   few
sesame seeds    3 tsp
mustard seeds    1 tsp
hing  little
salt to taste


For garnishing
fresh coriander leaves chopped  3 tsp
grated coconut   3 tsp

METHOD

wash & soak the dals in water for at least 1  1/2 hours.
power bajra like suji/rava consistency in a mixer.
add green chillies, curry leaves to the dals, grind them in the mixer by adding sour curds.
mix the powdered bajra with the dal paste.
add turmeric pdr, cumin-coriander pdr., hing, mix well.
make them into muthias, i.e.  like sausages, steam them well for about 40 minutes.
cool, cut them into slices.
heat oil in a frying pan, add mustard seeds, hing, sesame seeds, add muthias, fry them on low flame till they become crisp.
garnish with coconut & coriander leaves.
serve hot with tomato sauce or chutney.

Banana Oats Bread



Ingredients

banana 1 ripe mashed well
oats  1 cup
butter 3 tbsp
eggs 2
curd  1/2 cup
wheat flour 2 cups appro.
walnuts 3-4 tbsp or more if you like
raisins  3-4 tbsp
baking pdr. 1 level tsp
vanilla essence 1 tsp
molasses
salt 1/4 tsp

Method

melt butter, beat eggs well along with molasses, add banana, curd, then add flour, baking pdr., mix well, but don't beat too much. fold in oats, nuts, raisins & vanilla.

Bake in a pre-heated oven at 180 deg. C. for approximately 30 minutes or till baked well, i.e. when a clean knife is inserted in the middle, comes out clean.

This is a very healthy bread, as it has wheat flour, oats, molasses, very less butter. walnuts are good source of Omega- 3 fatty acids, good for heart & brain. what more can one ask for !

Kadboli


Ingredients:
  • 1/2 cup bajra
  • 1 cup rice
  • 1 cup jowar
  • 1/2 cup urad dal
  • 2 tbsps coriander seeds (dhaniya)
  • 2 tbsp cumin seeds (jeera)
  • 1 tbsp red chilli powder
  • 2 tbsps sesame seeds (til)
  • 1/4 cup heated oil
  • Salt to taste
  • Oil for deep-frying
Method:
  • Roast bajra, rice, jowarurad daldhaniya and jeera separately.
  • Mix them all together and grind into a fine dry powder.
  • Add salt, til, chilly powder and heated oil. Combine it into a smooth dough by adding lukewarm water. Keep it aside for an hour covered with a muslin cloth.
  • Take small pieces of dough and roll between your palms so that it resembles a small pencil. Join both the ends together to form a circle.
  • Take oil in a pan and deep-fry on a medium flame till the rolls turn brownish-gold. Drain the excess oil and let them cool.
  • The Kadboli can be eaten immediately or stored in an air-tight container.
