Custard halwa

 INGREDIENTS AND METHOD


custard powder  1/2 cup ( vanilla flavour)

water  1 cup

mix both well, keep it aside

sugar 2/3 cup + water 1 cup 

Heat a big pan with sugar and water, keep stirring well till sugar dissolves and the water begins to boil about 3 minutes

lemon juice of 1/2 lemon add to the boiling sugar syrup

mix well, let it boil for another minute

add the custard mixture stirring well

keep stirring well as it will get thick quickly, once it leaves the sides of the pan, add 2tbsp ghee 

add chopped nuts about 1 tbsp, mix well, cook for another minute

grease a tin or plate well, sprinkle some chopped nuts all around

pour the halwa mixture, level it well, allow it to set or keep in the fridge for 30 minutes to set well

turn the plate/ tin upside down, chop into desired shape

Enjoy home-made Karachi halwa.

Marie Biscuit Pudding

Ingredients  
2 cup milk
2 tbsp cocoa powder
2 tbsp custard powder
2 tbsp sugar
4 tbsp dark chocolate
1 cup heavy cream
2 tbsp icing sugar
½ tsp vanilla extract
1 pack Marie biscuit

Instructions 

  • firstly, in a bowl take 2 cup milk, 2 tbsp cocoa powder, and 2 tbsp custard powder.
  • whisk and mix well making sure there are no lumps.
  • transfer the mixture to a pan and cook on medium flame.
  • stir continuously until the mixture thickens and turns glossy.
  • add 2 tbsp sugar and 4 tbsp dark chocolate.
  • mix well combining everything well. cool completely.
  • in another bowl take 1 cup heavy cream, 2 tbsp icing sugar and ½ tsp vanilla extract.
  • using a beater, beat the cream till stiff peaks are formed.
  • now add in cooled chocolate custard mixture to the cream.
  • mix well until everything is mixed well. creamy chocolate custard is ready.
  • to prepare the pudding, in a pan place Marie biscuits.
  • pour in prepared creamy chocolate custard and spread uniformly.
  • layer out Marie biscuits and chocolate custard to your choice.
  • crush few biscuits on top to make it look attractive.
  • cover and chill for 4 hours or until everything is set well.
  • finally, cut into pieces and serve Marie biscuit pudding.

Easy Fruit Custard

Ingredients

  • 1 bowl milk
  • 1 tbsp custard powder
  • 2 tsp brown sugar
  • Water
  • 1/2 apple, chopped
  • 1 small banana, chopped
  • 10-12 grapes, chopped

 

How to Make Easy Fruit Custard

 
1. Boil milk in a deep pan.

2. Meanwhile, in another small bowl put custard powder and add brown sugar to it.

3. Pour some water to the bowl and mix well.

4. Add the mixture to boiled milk.
 
5. Whisk the milk thoroughly to avoid forming of lumps.
 
6. Bring the mix to simmer and transfer it to a bowl.

7. Take chopped apple, banana and grapes and put it over the custard.

8. Delicious fruit custard is ready to be served. You can also put it in the fridge for a while to serve chilled custard.

You can use fruits of your choice although sweet fruits are generally preferred for a custard.

Mango Ice Cream

Summer means mangoes which also means a lot of tasty dishes. Here's how to make delicious mango ice cream at home without an ice cream maker. With a blend of mangoes, cream and milk, create some magic this summer!

Ingredients

  • 1 cup milk
  • 3 cups cream
  • 1 cup mango - pureed
  • 1 cup mango - chopped fine
  • 1 Tbsp custard powder
  • 1 Tbsp vanilla
  • 360 gm (1 cup) sugar

 

Steps to Make Mango Ice Cream

1. Mix the custard in 1/4 cup of the milk and keep aside.
 
2. Heat the rest of the milk and sugar together. Let the sugar dissolve and mixture come to a boil.
 
3. When it boils, add the custard mixture and bring to a boil again, simmer for half a minute shut the heat and cool to room temperature.
 
4. Add mango puree, pieces, cream and vanilla. Mix well and transfer on to a container with a tight lid.
 
5. Freeze till almost set, take out and whip up with a hand beater and place back into the freezer.
 
6. The lid should always be tightly shut, as this avoids crystals from forming. Whip once more when almost set and place back in the freezer.
 
7. Alternatively, freeze in an ice cream machine according to instructions.

Papaya Ice Cream

 Papaya ice cream is a summertime treat that is refreshing and delicious. The fresh orange-coloured fruit lends the ice cream a unique flavour. This is the basic recipe - you can add other ingredients such as vanilla, dates or even other fruits.

 

Ingredients of Papaya Ice Cream

  • 1 Cup papaya pieces
  • 1 litre high-fat milk
  • 20 ml condensed milk
  • 2 tbsp custard powder
  • 140 gram sugar

 

How to Make Papaya Ice Cream

1.Blend the papaya pieces to form a puree.
 
2. In a small bowl, mix the custard powder with ¼ cup milk and set aside.
 
3. In a vessel, boil the rest of the milk until it reduces to around ⅓ or ½ its original quantity.
 
4.Add the custard powder mixture to the milk and stir it in. Add the sugar and mix it to dissolve. Bring the milk to a boil again, let it simmer for a few seconds and then lower the heat further.
 
5. Add the papaya puree to the mixture and stir. You can also add around 20ml of condensed milk for a better texture. Turn off the heat after 2-3 minutes.
 
6. Allow the mixture to cool completely before blending it in a mixer.
 
7. Once blended, transfer the ice cream mix to an airtight container and freeze it. After 1-2 hours, transfer the ice cream base back to the mixer and blend it. Refreeze in the same airtight container.
 
8. After around 3 hours, once the base is almost set, remove it and churn it again (using a hand blender or mixer).
 
9.  transfer the mixture back into the container and freeze it for 6-7 hours. Enjoy chilled and garnish with fresh papaya pieces.

APPLE CUSTARD WITH CHOCOLATE

INGREDIENTS
milk   500 ml / 1/2 litre
custard powder  2-3 tbsp mixed with little milk
sugar  6-7 tbsp as per taste
apple one grated
lime juice little to prevent apple getting brown
dark chocolate chips 2-3 tbsp

METHOD
boil milk, add sugar, stir well, add custard pdr mixture, stirring continuously till thick, remove
in another pan, saute apple till moisture evaporates, keep in a bowl
once both are cool, mix well and refrigerate till chill
serve decorated with chocolate chips

DATE DELIGHT COOKIES



INGREDIENTS
seed-less dates  250 gm finely chopped/ minced
sugar  1/3  cup
water  ½  cup
cinnamon pdr.  1/8 tsp
For dough
castor sugar   1/2 cups
butter  1/4 cup
custard pdr.  1/3 cup
maida/ all purpose flour  1 cups
baking pdr.  1/3  tsp
milk  1 tbsp
vanilla essence 1 tsp
salt a pinch

METHOD
Cream the butter and sugar. Sieve the dry ingredients together and mix with creamed butter. Add milk little by little to make soft dough. Chill the dough in the fridge for 30 minutes. Divide the dough into small equal portions and roll on a floured board like small biscuits size, all should be of the same size. Bake at 180 deg. C for about 10-15 minutes, till light brown. Cool on a grease-proof paper.
Cook together dates, sugar, cinnamon and water; it should become a thick spread. Divide this mixture into ½ the no. of biscuits baked. Spread the mixture evenly on each biscuit cover with another biscuit. Wrap all biscuits with an aluminum foil, keep in an air-tight container for a day. The date mixture will seep into the biscuit, giving it a fruity flavour.
