Cheesecake Iced Latte

Ingredients:

For Foamy Coffee:

Instant Coffee | 2tsp – 1/2 Tbsp

Sugar | 1/2 Tbsp (Adjust To Taste)

Hot Water | 2 Tbsp

For Cheesecake mixture:

 Cream Cheese | 2 Tbsp (Softened)

Whipping Cream | 2 Tbsp (Chilled)

Condensed Milk | 1-2 Tsp

Salt | A Pinch

For Biscuit crumble:

Biscuits | 6-8

Butter | 1 Tbsp (Melted)

  

Method:

Make the foamy coffee by adding instant coffee, sugar and warm water in a tall glass and froth it using a frother until creamy and foamy.

To make the cheesecake mixture, add whipping cream in a glass along with cream cheese, condensed milk and a pinch of sea salt, whip it until you get soft peaks.

For the biscuit crumble, add your choice of biscuits into a chopper along with some melted butter and blitz it until you get fine biscuit crumble.

For the assembly, add loads of ice cubes to a glass, add milk of your choice, spoon and add a layer of the creamy coffee foam followed by a layer of the cheesecake mixture.

Finally, top the drink with the biscuit crumble, and your ridiculously addictive and indulgent Cheesecake Iced Latte is ready!

Buckwheat flour (kuttu atta) puri

Buckwheat flour (kuttu atta) puris are a traditional fasting recipe enjoyed during many Hindu vrat days. Served with vrat-friendly potato curry or yoghurt, they make a comforting meal during rainy weather. 

 Ingredients

  • 2 cups buckwheat flour or 250 grams kuttu ka atta
  • ½ tsp cumin powder
  • 1 tsp rock salt (edible and food grade) (sendha namak)
  • 1 cup hot boiling water
  • peanut oil for deep frying, add as required
  •  

    Preparations

    To make the dough  Take 2 cups buckwheat flour (or 250 grams kuttu ka atta) in a large mixing bowl or a plate (parat).Add ½ teaspoon cumin powder and 1 teaspoon rock salt (sendha namak).With a spoon mix well.Now add 1 cup hot boiling water.With a spoon mix everything. Cover the pan and keep aside till the mixture cools down.Once the mixture has cooled down, begin to knead it. While kneading add warm water if required. 1 to 2 tablespoons of water can be added.Knead to a smooth dough. The dough should not be sticky. Otherwise you won’t be able to roll the pooris.


    making kuttu ki puri Make small or medium sized balls from the dough. Take a dough ball and spread some oil on both sides. With a rolling pin, roll to a round circle. You can keep the kuttu puris slightly thick, but do not make them thin. Heat oil for deep frying in a kadai or pan. Check the oil by adding a small piece of the dough in it. If it comes up steadily and gradually, the oil is hot enough for the puris to be fried. Then gently slide one puri in the oil. Fry on medium flame. It will come on the surface and also puff up. If the puri does not puff, then gently nudge & press the surface with a slotted spoon, so that the puri puffs up. Fry till you see that oil has stopped sizzling and the kuttu puri looks golden and crisp. Then turn over the puri.  Fry the second side also till it turns crisp and golden. Remove with a slotted spoon. Place them on paper towels to remove excess oil. Similarly fry the rest of puris. Serve kuttu ke atte ki puri hot with vrat ke aloo or dahi arbi or dahi aloo.

    Green tea with mint- Anti-inflammatory , refreshing drink

    Ingredients 

    1 green tea bag or 1 tsp loose green tea
    1 cup hot water
    4–5 mint leaves
    1 slice lemon (optional)

    How to make it:

    Steep the green tea and mint leaves in hot water for 2–3 minutes. Remove the tea bag or strain the leaves. Add lemon if you like and sip warm or chilled throughout especially humid afternoons for a lighter, refreshing pick-me-up.

    Pearl Millet Roti

     Ingredients

    1/4

    Add hot water gradually to the sieved pearl millet flour (and salt, if using). Knead into a smooth, soft dough.

    Divide the dough into equal portions and shape into round balls.
    Place a dough ball on a polythene sheet and flatten it into a round roti using a rolling pin or by gently pressing with your palm.
    Heat a tawa well. Carefully transfer the roti onto the hot tawa.
    Cook on both sides. Serve hot with any curry or dal

    Weight loss and dairy free smoothie

    Ingredients and Preparations

    Soak 1 tbsp chia seeds. These are an effective superfood for weight loss and detoxification and are rich in fiber, omega 3 fatty acids and proteins.

    Mix chia seeds with 3-4 tbsp of water well, let them soak for 10-15 minutes until it forms  a gel.

    Add 1 tsp of green tea in a cup of hot water.

    Green tea promotes weight loss by boosting metabolism, stimulating fat burning with catechins and caffeine and eliminating excess fluid thanks to its diuretic effects.

    Add 1 tbsp of pumpkin seeds to a blender. They’re a healthy food that promotes weight loss thanks to their high protein and fiber content. They provide a long-lasting feeling of satiety and regulate metabolism and digestion.

    Powder the pumpkin seeds, they inhibit the formation of fat tissue thanks to their polyunsaturated fatty acids. Add the powder in a blender jar.

    Chop a green unsweetened apple into small pieces and to the blender jar. The pectin it contains acts as a sorbent and cleanses the body, which organic acids (malic acid) support fat burning.

    Peel ½ an orange. Oranges are filling for a long time, are a good alternative to sweets and contain pectin which inhibits fat absorption. Cut into slices , add to the blender. 

    Squeeze ½ lemon. Lemon juice support weight loss and improves digestion and stimulates metabolism. Lemon juice nourishes and supplies the body with micronutrients, removes toxins, improves skin quality and ensures a radiant complexion. Grate the rest of the lemon. Lemon peel are rich in vitamins and therefore ideal for anyone who wants to lose weight. It stimulates the metabolism, slows down carbohydrate absorption and reduces cravings for sweets.

    Peel 1 ½ cm long ginger piece, it stimulates the metabolism and helps burn calories, thereby reducing hinger and cravings for sweets. Due to its thermogenic effect, ginger is an effective, natural remedy for weight loss. Grate a 1tsp of ginger to achieve intense taste and better aroma and smooth consistency without fibrous pieces. This ensures optimal release of the essential oils and nutrients.

    Add a handful of spinach. Spinach is a low-calorie superfood, ideal for weight loss and detox. It contains plenty of fiber for better digestion and thylakoids, which curb appetite. Regular consumption accelerates metabolism, and helps break down toxins.

    Add the strained cup of green tea to the blender. Blend well. This smoothie is so nutritious that it can replace a meal. Drink it in the morning instead of breakfast. If you’re very hungry, drink ½ a glass before your main meal- you’ll then only et half as much as usual.

    Put the soaked chia seeds in a jar, add the smoothie. 

    Do not store: the chia seeds will quickly turn the smoothie into a thick jelly and the vitamin C content from the lemon will be destroyed by contact with air. Drink immediately.

    Corn - Coconut Pulao

     Corn Pulao 

    Ingredients

    250 Gram Basmati rice

    80 gram American corn kernels

    2 tsp Olive oil

    1 Onion

    1 tsp Ginger garlic paste

    1 tsp Salt

    4 Green chilies

    1 tsp Cumin seed

    1 Bay leaf

    1/2 tsp Pepper corn

    8 flakes Cloves

    2 cups Hot water

    3 tbsp Coriander leaves, chopped

    2 tsp Lime juice

    Bell pepper (Sautéed and diced), chopped

    Coconut, grated 

     

    Preparations

    Rinse basmati rice and soak it in water for at least 15-20mins.

    Grind coconut, green chili, coriander leaves to make a fine paste.

    Take a pan add olive oil.

    Once the oil is hot add cumin seeds, cloves, bay leaf, pepper corn, sliced onion, slit green chilies, ginger garlic paste and the above coconut paste.

    Sauté well, and then add corn kernels.

    Drain the rice and add it to the pan. Keep stirring.

    Add hot water, little salt and cook for 15mins.

    Once the rice is 3/4th done add lime juice.

    Finally garnish with sautéed diced red and yellow bell pepper, grated coconut and chopped coriander leaves.

    Serve with cucumber raita.

    Blueberry-Coconut-Walnut Baked Oatmeal

    Ingredients

    ½ cup dried pitted Medjool dates (about 7 dates), chopped 

    8 tbsp hot water, divided, plus more for soaking dates 

    3 cups frozen blueberries, divided

    tsp vanilla extract, divided

    ½ cup well-shaken and stirred unsweetened coconut milk

    1 very ripe medium banana

    1 large egg

    2 tsp coconut extract

    cups old-fashioned rolled oats

    cups chopped walnuts

    ¾ cup toasted unsweetened shredded coconut

    1 tsp baking powder

    1 tsp cinnamon pdr

    ¼ tsp salt

    Directions

    1. Preheat oven to 375°F. Lightly coat an 8-inch-square baking pan with cooking spray.

    2. Place ½ cup dates in a medium heatproof bowl; add enough hot water to fully cover by ½ inch. Let stand at room temperature until the dates are slightly softened, about 20 minutes.

    3. Meanwhile, combine 2 cups blueberries, 1 tablespoon water and ½ teaspoon vanilla in a small saucepan; bring to a boil over medium heat. Reduce heat to medium-low and simmer, stirring often, until the blueberries are mostly broken down and the sauce is slightly thickened, 6 to 8 minutes. Remove from heat and set aside.

    4. Drain the dates and transfer to a food processor; pulse until finely chopped and sticky, about 10 pulses. With the processor running, slowly pour the remaining 7 tablespoons hot water through the chute, a few tablespoons at a time, until a semi-smooth paste forms, about 1 minute, stopping to scrape down sides as needed.

    5. Add ½ cup coconut milk, 1 banana, 1 egg, 2 teaspoons coconut extract and the remaining 2 teaspoons vanilla to the food processor with the date mixture; process until smooth, about 1 minute.

    6. In a large bowl, combine 2¼ cups oats, 1½ cups walnuts, ¾ cup coconut, 1 teaspoon baking powder, 1 teaspoon cinnamon and ¼ teaspoon salt. Add the date-banana mixture; stir until combined. Gently fold in the remaining 1 cup blueberries. Spoon half of the oat mixture (about 3 cups) into the prepared pan; spread in an even layer to fully cover the bottom. Spread the blueberry sauce evenly over the oat mixture; top with remaining oat mixture, spreading evenly over the sauce.

    7. Bake until just set in the center, 30 to 35 minutes. Let cool in the baking dish on a wire rack for 10 minutes before serving.

    Matcha Green Tea

    Matcha is a traditional Japanese tea, produced from the leaves of the Camellia sinensis, and is mostly available as a finely ground, green-colored powder. Matcha’s unique production includes grinding the leaves into powder using grinding stones, which differs from traditional tea infusions that use whole leaves. The main benefit of this method is that the grinding allows the leaves to release more nutrients into the tea, which are lost in the regular infusion method. These nutrients include many essential minerals, vitamins, and the powerful antioxidant EGCG, and they make Matcha into a natural remedy that benefits our body in several ways. 

    Japanese researchers found that Matcha aides in lowering “bad” cholesterol (LDL), stabilizes the glycemic levels in the blood, speeds up the metabolism, and even helps ease anxiety. 

    Important: Diabetics and people who take blood thinners should consult with their doctor before consuming Match.

    Traditional Japanese Rules for Matcha Powder 
    In the traditional Japanese tea ceremony, every guest receives a small bowl of hot water with a quarter of a teaspoon of Matcha powder at the bottom. Each guest whisks his or her bowl using a bamboo whisk and spoon called chasen and chashaku until the tea’s consistency is uniform.

    Traditional preparation process: 
    In a small bowl, add between ¼-⅓ teaspoon of Matcha powder, then pour a small amount of hot water.
     
    Do not use boiling water – it’ll remove many of the nutrients. 
     
    Mix the powder in until there are no more clumps. Fill the rest of the bowl with hot water.

    Date Brownies

      

    Ingredients

    1 1/2 cups pitted dates

    1 cup hot water

    3/4 cup unsalted butter* softened (1 1/2 sticks)

    2 cold eggs

    1 tsp vanilla extract

    3/4 cup cocoa powder

    1/2 cup plus 2 tbsp all purpose flour

    Sea salt for sprinkling

    For the glaze:

    3 tbsp cocoa powder

    3 tbsp honey or other natural syrup-type sweetener

    1 tbsp melted butter or coconut oil

    1/4 tsp pure vanilla extract 

     

     Preparations

    Grease or line an 8x8 baking pan. Preheat oven to 350F.

    In a food processor or blender, puree the dates and hot water until smooth. Measure out a cup of the paste (mine yielded exactly a cup,) and transfer to a large bowl with the butter.

    Cream the butter and date paste until smooth.

    Add the eggs, one at a time and vanilla extract, mixing until fluffy and smooth.

    Add the cocoa and flour, and mix on low until well combined.

    Spread batter into prepared pan, smoothing with the back of a spoon. Sprinkle a little sea salt on top.

    Bake for 18-23 minutes, or until edges are set. Allow pan to cool while you prepare the glaze.

    Whisk together the butter, honey and cocoa powder. Add vanilla and whisk until smooth. If the glaze seems a little runny- add a dash more of cocoa powder. If it seems too thick- you can add a splash of milk. Drizzle over the brownies and sprinkle with more sea salt.

    Brownies will last for up to a week in a sealed container in the fridge.
