Baked Cauliflower with dip

    

Ingredients and Preparations

 

Take out cauliflower florets from 1 big cauliflower., wash well.

Heat a pan with enough water to immerse the cauliflower, adding  ½ tsp salt

Cover and cook florets for 5 minutes

Drain well on a kitchen towel.

In a big bowl add 1 ½ cup of breadcrumbs, crush 1 garlic, 5 tsp olive oil, ½ cup grated Parmesan cheese. 2 tsp parsley chopped, 1 tsp Italian herbs mix well.

Break 3 eggs in a bowl, beat well with a fork

Add ½ cup flour in a bowl, add florets, to coat them well with flour.

Now coat the florets well in the egg mixture, then coat well in breadcrumbs mixture.

Then arrange the coated florets separately , leaving little space between them on a baking tray lined with butter paper,

Bake in a preheated oven @180 C/ 360 F for 15 minutes

In a bowl add ¾ cup sour cream and  ¼ cup thick yogurt, mix well adding 1 tbsp finely chopped parsley and 1 tbsp lime juice, along with salt and pepper to taste.

Serve the baked florets with a dip.

Roasted cauliflower florets

 Ingredients

  • 1 head of cauliflower
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • And your choice of seasonings (e.g., paprika, garlic powder, thyme)

Method:

  • Preheat oven to 400°F (200°C).
  • Cut the cauliflower into florets.
  • Toss with olive oil, salt, pepper, and desired seasonings.
  • Spread on a baking sheet and roast for 20-25 minutes or until tender and browned.

COLOURFUL IDLIS 1

INGREDIENTS
idli batter as usual  5 cups
spinach puree 1/4 cup
beet puree    1/4 cup
pumpkin puree   1/4 cup
carrot puree      1/4 cup
salt, pepper pdr. to taste

METHOD
divide the idli batter into 4 parts
in one part add spinach puree, mix well, adding seasoning to taste
in 2nd part, add beet puree, mix well, season it to taste
in 3rd part add pumpkin puree, season it to taste
in the 4th part add carrot puree, season it to taste

Mix each batter well, pour in greased idli plates, steam as usual for 10-12 minutes.

ps- This is one way to make the idlis attractive and make the kids eat the veges which they normally avoid.

NOTE- if you want a bit spicy, in spinach puree, you can add some green chilies and grind it together.
In beet and carrot you may grind some red chilies as per taste
 To make it still healthier, you may add some corn in spinach, peas in pumpkin, add some blanched cauliflower florets in beet, blanched broccoli florets in carrot, to make it more colourful and healthy ! These idlis will be very healthy, as it has vitamins, minerals and fibre which are essential to us.
