Mysore Akki Roti

  

INGREDIENTS
  
250 gm Left Over Cooked Rice
 1 Onion
 1 Green Chili
 4 tbsp Rice Flour
 4 tbsp Dill Leaves/Soya Leaves/ fennel/ thyme/ rosemary/ basil
 4 tbsp Coriander leaves
 5 ½ tsp Salt

 Preparations

wash and chop onion, green chili, leaves 

Take cold left-over 250 grams of cooked rice and coarsely grind it in the mixer.
Remove this in a bowl.

Coarsely grind: chopped onions, chili, coriander leaves, dill leaves
separately in a blender
Add the above to the rice in the bowl along with salt and rice flour

Mix this mixture thoroughly with hands, to form a sort of dough.

Take a plastic sheet, coat it with oil, keep one ball on it , cover with another plastic sheet which has also been coated with oil and gently roll it being careful not to break it.
If the dough is too dry it ill break, add few splashes of water.
In case it’s too wet it will stick to the plastic, add rice flour.  

Heat a tawa and carefully peel the roti off the plastic sheet and put this onto the hot tawa.
Put little oil all around the roti so that it doesn’t stick and cook.
Once cooked it will start leaving the sides of the tawa.
Gently flip it over and again pour little oil all around the roti.
Cook until done.
It should have a few light brown spots. 

Serve hot with coconut chutney or any chutney of your choice

Veg Akki Roti- vegan recipe

Normally akki roti most people makes using just rice flour with some spices, but this has loads of veges, full of nutrition.

TIP - whenever you knead a dough having rice flour, use warm water, as then the dough will be soft.

INGREDIENTS

rice flour  1/2-3/4 cup

warm water to knead, then only the dough will be soft.

salt to taste

jeera/ ajwain 1/2 tsp

cabbage finely chopped 3 tbsp

carrot finely grated 3 tbsp

spinach finely chopped 3 tbsp

green chilies  finely chopped to taste

ginger finely chopped / grated 1 tsp

turmeric pdr a pinch

oil 2 tsp

 

METHOD

mix veges , spices, rice flour, oil well, the add warm water to knead a soft dough.

this roti is not rolled with a rolling pin, but with hand on a banana leaf of plastic sheet by smearing little oil on hand and on the leaf/ sheet. Take a small ball, spread with your fingers and palm to small rotis.

Heat a tawa, cook the roti, till brown spots come on both sides.

Once cooked, smear some ghee on it. 

This is best served with a gravy having protein as this has carbs and fiber with minerals and vitamins.

Akki Roti/ Rice flour roti

Ingredients 
Rice flour   2 cups (makes 4 rotis) 
Onions    1 small finely chopped
Carrot   1 grated
dhania  handful chopped
Green chilli  1 finely chopped
Cumin seeds  1 tsp
Oil     2 tbsp
Salt   to taste
Water  1 cup or according to required consistency
Method
At first take water in a vessel and bring it to boiling stage.(using boiling water makes dough smooth to pat on and also makes rottis soft to eat)
Meanwhile mix rice flour with chopped and grated veggies add salt.
Add boiling water, mix well using a spoon until dough comes together.
 Keep covered for 10 mins.(When covered steam from the hot water will make the dough moist)
When dough is cool enough to handle with bare hands add 1-2 tbsp of oil and knead well.
 Now the dough( should be soft) is ready to make rotis,  using wax paper.
Take a sheet of wax paper put little oil and smear around, take handful dough, make a ball and pat evenly. 
Now transfer onto hot tava and remove the paper.
Leave it for a minute, turn other side and leave for 30 sec or so. 
You can smear some oil and cook it on both sides till crisp if you prefer.
serve it hot with some chutney/ pickle and raita.
