Rich Chocolate Tart

This tart recipe is the one you save up for special occasions. Although we're all for calling life a special occasion and enjoying it whenever you'd like, do keep in mind that this one takes up to 4 hours to make.

Ingredients for tart base: 
 
Unsalted butter - 1 stick (room temp.) 
 
Powdered sugar - 1/4 cup 
 
Egg - 1 
 
All-Purpose flour - 1 1/4 cups 
 
Ground almonds - 1/2 cup 
 
Salt - a pinch 

Ingredients for tart filling:  
 
Whipped cream - 2/3 cup 
 
Milk - 1/3 cup 
 
Dark chocolate - 7 oz. (chopped) 
 
Sugar - 2 tbsp. 
 
Salt - a pinch 
 
Vanilla Extract - 1 tsp. 
 
Eggs - 2 
 
Berries - of your choice
 
Pistachios - a handful chopped / or an nut of your choice (optional) 



Method of preparing the tart base:  
 
Mix the butter and sugar with an electric mixer until light and fluffy. Add the egg. 
 
In a separate bowl, whisk the flour, ground almonds and salt. Combine into the mixer bowl. 
 
Wrap the dough in shrink wrap and chill in the fridge for 30 minutes. 
 
Once chilled, roll into a 12-inch circle. Lay flat in a 9-inch pie dish. 
 
Cut away the excess and chill for another 30 minutes. 
 
Preheat oven to 350°F. Prick with a fork and bake for 25 minutes or until golden brown. 
 
Remove from oven, lower heat to 325°F. 


Method of preparing the tart filling: 
Simmer the whipped cream and the milk but do not boil. 
 
Remove from heat and add the chocolate. 
 
Once the chocolate fully melts, add the sugar. 
 
Stir in the salt, vanilla and eggs. Bake for 20 minutes. 
 
Let cool and chill for 2 hours. Top with berries and pistachios and serve.

Tasty Nutty Banana Sheet Cake

 Recipe - Nutty- Banana - Sheet Cake

Not only is this cake delicious, but it's also very easy to make. Just like banana bread, it's a one-bowl wonder, thanks to the fact that oil is used. Even with the oil, this is still a light cake, which means that it's ideal for eating at any time of the day. The fluffy layer of banana cake goes along perfectly with the mixture of crunchy nuts and seeds. To add a bit of sweetness to the cake, a drizzle of chocolate can be added.

Ingredients 
 2 medium, overripe bananas (about 7 ounces peeled banana)  
1/2 cup loosely packed light brown sugar  
1/3 cup vegetable oil or melted unsalted butter  
2 large eggs  
1/2 cup ground almonds  
1/3 cup applesauce  
1/4 cup milk  
3/4 tsp baking soda  
3/4 tsp baking powder 
1/2 tsp fine salt 
1 1/2 cups whole-wheat pastry flour 
1 tbsp poppy seeds  
3 tbsp sunflower seeds  
1/2 cup walnut pieces  
2 ounces dark chocolate (70% cocoa), melted / 25 gm



Method  
 
1. Heat the oven to 350°F. Coat a 9x13" rimmed baking sheet with oil or butter and set aside. 
 
2. Peel the bananas, place on a plate and mash them using the back of a fork until smooth. Add the mashed bananas to a large bowl and add the sugar, oil, eggs, butter, almonds, applesauce, and milk. Stir until it has mixed well, then add the baking powder, baking soda, salt, flour, and poppy seeds. Fold the mixture together until no floury patches remain. 
 
3. Pour the batter into the already prepared baking sheet and sprinkle with the sunflower seeds and walnut pieces. Place in the oven, and bake until well-risen and golden brown - this should take around 35-40 minutes.
 
4. Drizzle melted chocolate on top of the cake and set aside to cool. Once cooled, cut into 9-12 pieces.

Apple Tart Recipe with Honey and Rosemary

Ingredients for Apple Tart:  
 
375 g (about 13 oz) puff pastry (thawed) 
 
 3  1/2  tbsp (50 g) unsalted butter (softened) 
 
1 egg yolk 
 
⅔ cup (70 g) ground almonds (store-bought or ground in a food processor) 
 
1 tsp vanilla bean paste
 
⅔ cup (200 ml) honey (room temperature) 
 
2 apples (preferably Pink Lady, thinly sliced and cored) 
 
Leaves from 1 rosemary sprig 
 
Heavy cream, whipped for serving (optional, high fat content recommended) 
 
 
Instructions for Apple Tart: 
 
Roll out the puff pastry on a lightly floured surface into a 12-inch (30 cm) round and place it on a baking sheet lined with parchment paper. 
 
Preheat the oven to 400°F (200°C). In a medium bowl, combine the butter, egg yolk, vanilla bean paste, ground almonds, and about ¼ cup (60 ml) of honey. 
 
Stir with a wooden spoon until the mixture is smooth. Spread the mixture evenly over the puff pastry, then arrange the apple slices on top. 
 
Drizzle about ¼ cup (60 ml) of honey over the apples and place the tart in the oven for about 20 minutes, until the pastry is golden and slightly crisp. 
 
While the tart is baking, heat the remaining honey with the rosemary leaves in a pan over low heat, stirring for a few minutes until the honey becomes runny. 
 
Turn off the heat. Once the tart is baked, remove it from the oven, pour the warm honey over the tart, and whip the cream in a suitable bowl for serving. Serve the tart with the whipped cream on the side.

Egg-less Burfi Cupcakes

 Ingredients:
Cupcake Base:

• 90 g (¾ cup) plain flour
• 36 g (⅓ cup) almond powder
• ¾ tsp baking powder
• ¼ tsp baking soda
• ¼ tsp salt
• 58 g (¼ cup) butter, cubed
• 75 g (⅓ cup) milk
• 60 g (¼ cup) yogurt
• 100 g (½ cup) sugar

Burfi Layer:
• ⅛ cup ghee (clarified butter)
• 1 cup milk powder
• 2 tbsp almond powder
• 40 g (3 tbsp) milk
• ½ cup powdered sugar
• ½ tsp cardamom powder

Burfi Frosting:
• 50 g cream cheese
• All of the prepared burfi layer
• 200 g whipping cream
• 3 tbsp icing sugar
• Dried rose petals, slivered pistachios, and saffron strands for garnish (optional)

Directions:
1. Prepare the Cupcake Base:

o Preheat your oven to 350°F (175°C) and line a cupcake tray with paper liners.
o In a bowl, whisk together the plain flour, almond powder,baking powder, baking soda, and salt.
In another bowl, cream the butter and sugar until light and fluffy.
Add the milk and yogurt to the butter mixture and mix well.
Gradually add the dry ingredients to the wet mixture, stirring until combined.
Divide the batter evenly among the cupcake liners, filling each about ⅔ full.

Bake the Cupcakes:
o Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
o Let the cupcakes cool completely on a wire rack.


3. Prepare the Burfi Layer:
o Heat the ghee in a pan over medium heat.
o Add the milk powder and almond powder, stirring constantly until the mixture starts to come together.
o Gradually add the milk, powdered sugar, and cardamom powder, and continue to cook, stirring, until the mixture thickens and starts to pull away from the sides of the pan. Remove from heat and let it cool slightly.
4. Assemble the Burfi Cupcakes:
o Once the cupcakes are cooled, cut out a small portion from the center of each cupcake to create a well.
o Spoon the prepared burfi mixture into the well of each cupcake.

5. Prepare the Burfi Frosting:
o In a bowl, beat the cream cheese until smooth.
o Add all of the prepared burfi layer to the cream cheese and mix until well combined.
o In another bowl, whip the whipping cream with icing sugar until soft peaks form.
o Gently fold the whipped cream into the burfi mixture until well combined.

6. Frost the Cupcakes:
o Pipe or spread the burfi frosting over the top of each cupcake.


7. Garnish:

o Garnish with dried rose petals, slivered pistachios, and saffron strands if desired.

Nankhatai biscuits

Ingredients

Ghee  75 gm

Pdr sugar  75 gm

Maida    40 gm

Almond pdr  40 gm

Besan   25 gm

Fine rava/ suji  10 gm

Baking pdr  ¼ tsp

Pinch of salt

 

Method

In a bowl add sugar and ghee mix it well and beat it well for 3 minutes till it becomes light and fluffy

Sift the dry ingredients- maida salt , baking pdr and besan

Gently mix this along with almond pdr and rava with a light hand to form a dough.

Preheat oven to  160-170 deg. C / around 320 deg. F

Shape the dough into small balls on the baking sheet or tray lined with a parchment paper

Pre-heat oven for 7 minutes, bake the nankhatai for another 15-20 minutes, as the time can vary depending on the oven size, voltage, so keep a watch after 12-14 minutes, once the top is brown, switch off the oven, take the tray out, cool the biscuits on a rack completely before storing it.
