Left-over rice uttapam

 Ingredients

left over rice 1 cup +

suji 1 cup

curd 1 cup 

water  1/2 - 1 cup is used to grind the rice, suji and curd

salt to taste, mix well, rest for 5-10 minutes

blend with water, remove add

Eno 1 tsp , mix well

smear oil on a hot tawa, spread the batter, put little oil all around, once bottom is brown, flip over and cook for another 1-2 minutes, serve hot either with the tomato-onion chutney or coconut chutney. 

oil to cook 

Chutney

oil 1 tbsp 

urad dal 1 tbsp

chana dal  1 tbsp

green chilies as per taste

onion 1 medium

tomatoes 2-3

 garlic 3-4 optional

salt to taste 

fry the dals, add garlic, onion and green chilies, once onion turns transparent, add the chopped tomatoes, mix well, cover and cook till tomatoes are soft, once cool, grind to a smooth paste

season

oil 1 tsp

urad dal  1 tsp

red chili 1

hing little

curry leaves chopped 1 tsp

pour the seasoning over the chutney, mix well , serve with uttapam

Panchamrit

Panchamrit is traditionally prepared as part of religious and festive offerings, with recipes varying across regions, families and traditions.

Ingredients

Full-fat milk – 1 cup

cow ghee – 1 tbsp

Raw honey – 1 tbsp

jaggery powder – 1 tbsp

Curd – 1 tbsp

Fresh tulsi leaves – 1 tsp

 

Method

In a clean bowl, add the milk and curd. Mix gently until combined.

Add the ghee, honey and jaggery powder.

Stir until the ingredients are evenly combined. Allow the mixture to rest briefly if needed for the jaggery to dissolve.

Add fresh tulsi leaves just before serving.

Serve fresh as part of a festive offering or prasad.

Serving note: Panchamrit is best served fresh. If not consumed immediately, refrigerate it appropriately.

Healthy Flourless Cake with Nuts and Raisins

 Ingredients and Preparations

oats 1 cup

eggs 3

salt a pinch, mix the above ingredients well

banana 1 chopped

apples 2 chopped , blend both the fruits to a fine smooth paste and add to the pats mixture

raisins 40 gm, wash and soak in water, drain well, dry over paper towels, add to the oats mixture.

walnuts 50 gm, chop well

grease a baking pan well , pour the oats mixture, tap well, sprinkle walnuts on top, press it down lightly.

Bake in a pre-heated oven @ 180 C/ 360 F for 30 minutes.

Thick curd 150 gm, spread on top of the cake, cut the cake into small squares, spread the curd all around the sides well, spread some chopped nuts on top and serve.

Healthy Diet Cake without Flour and Sugar

 Ingredients and Preparations

Oats 1 cup

water  100 ml, mix well with oats

apples 3 chop into small pieces, blend in a mixer jar to a smooth paste

spread the apple over the oats mixture

eggs 3, separate the yolks and the white, add the yolks to the other mixture and mix well along with 1 tbsp curd and 1 tbsp honey, cinnamon pdr 1/4 tsp mix all well.

wash and soak 60 gm dates, drain well, chop fine and fold into the oats mixture. 

Bake in a pre-heated oven @ 180 C or 360 F for 30 minutes,

while the cake is being baked, beat the egg whites with a pinch of salt, after beating for a few seconds, add 1 tbsp sweetener and beat well.

add 1 tbsp corn starch beat well it forms a thick peak and hen you turn the bowl upside down, it should not fall down.

spread this egg white mixture over the baked cake, sprinkle some poppy seeds all over and bake again @ 180 C/ 360 F for 20 minutes.

Cool slightly, cut and enjoy your healthy cake without any guilt feelings.

Instant Tomato Dosa and Coconut chutney

 I'm sure that most Indians love dosa, all the more if the ladies don't have the time to grind, ferment and make. Today is such a quick dosa that anyone can do within 30 minutes and serve along with coconut chutney or milagai podi.

Ingredients

suji/ rava 1 cup

curd 1/2 cup

tomato 1 big chopped

green chili 1-2 chopped as per taste 

salt to taste

oil to cook

 

Preparations

blend together suji, curd, tomato, green chili to a smooth paste, add salt and let the batter rest for 15 minutes. Mix well.

Heat a tawa, smear well with coil, spread the batter as thin as possible, that depends on how thin and crisp dosa one wants. If one wants little soft dosa, don't spread the batter too thin. Put little oil all around, once the bottom is crisp, flip over , then cook for another minute and serve hot with everyone's favourite coconut chutney and milagai podi.

 

Coconut chutney

pottukadalai/ fried dal 2 tbsp or more depends on for how many people you're making the chutney.

fresh grated coconut 1 cup

green chilies as per taste, as the green chili I get in this city is so spicy 1 is enough.

coriander leaves if you've 2-3 tbsp chopped

salt to taste

blend all adding little water, it depends on how thick chutney you want.

for seasoning

oil 1 tsp

mustard seeds 1/2 tsp

urad dal 1 tsp

hing little 

red chili 1

curry leaves few chopped

once oil  is hot add mustard seeds, once it crackles, add urad dal, hing, red chili, curry leaves, saute as dal gets golden, pour over the chutney, mix well.

 

Note- if one likes, one can add some chopped onion once you spread the batter and press it down for onion dosa, OR you can add finely chopped onion to the batter and make the dosa. 

Those who like carrot, you can add grated carrot too, to make it more nutritious.

Pineapple in Sweet-Tangy Coconut Yoghurt- Pachadi

Ingredients

  • Pineapple, cubed — 1¼ cups
  • Green chilli, chopped — 2
  • Turmeric powder — ¼ tsp
  • Grated coconut — ¼ cup
  • Cumin seeds — ½ tsp
  • Curd (yoghurt), whisked — ½ cup
  • Coconut oil — 1 tbsp
  • Mustard seeds — ¼ tsp
  • Dried red chilli — 2
  • Curry leaves — 1 sprig
  • Salt — to taste


Method

  1. Cook the pineapple with green chilli, turmeric powder, salt, and a little water until soft.
  2. Grind the coconut and cumin seeds into a smooth paste with a little water.
  3. Add the coconut paste to the cooked pineapple.
  4. Mix well and simmer for 2-3 minutes.
  5. Turn off the heat and let it cool slightly.
  6. Stir in the whisked curd.
  7. Heat coconut oil in a small pan.
  8. Add mustard seeds, dried red chilli, and curry leaves, and let them splutter.
  9. Pour the tempering over the pachadi.

Tip: Add the curd only after the pan is off the heat — boiling curd can cause it to split.

Beetroot Paratha For Kids

 Ingredients: 

1 cup whole wheat flour, 

½ cup beetroot (finely grated), 

2 tbsp curd, 

1 tbsp ghee or oil. 

½ tsp cumin seeds, 

¼ tsp turmeric pdr, 

¼ tsp red chilli pdr, 

salt as per taste

water as needed

Preparations

combine the whole wheat flour, grated beetroot, spices, salt, and ghee in a large bowl.  

Next, cover and let the dough rest for about 10 to 15 minutes to ensure that it rolls more easily.

Divide the dough into equal parts and roll each of them to make medium-sized paratha.

Now, heat the tawa and cook each paratha nicely from both sides until golden spots appear and they seem cooked enough. 

You can pair the beetroot parathas with curd, chutney or any gravy, tomato ketchup.

Instant Rava Dhokla

 Everyone loves the soft, spongy Gujarati dhokla, which is healthy, as it is steamed. Here is a simple, easy version, no grinding, no fermenting,

 

Ingredients

suji 1 cup

curd 1/2 cup

water as needed

turmeric pdr  1/2 tsp

red chili pdr 1/4 tsp 

hing 1/4 tsp 

Eno fruit salt 1/2 tsp

salt

oil 1 tbsp

mustard seeds 1/2 tsp

sesame seeds 1 tsp

curry leaves few 

green chilies 1-2 slit

sugar 2 tsp 

water 3-4 tbsp 

Preparations

Mix the suji, curd, water, turmeric pdr and red chili pdr, hing and salt to a smooth batter, let it rest for  30 minutes.

Just before steaming, mix Eno fruit salt with 1 tsp water and whisk well.

Pour the batter in a greased bowl/ plate and steam for 12-15 minutes, remove, let it come to room temperature.

Heat oil, add mustard seeds, once it crackles, add sesame seeds, curry leaves and green chilies, add little water and sugar  mix well, after it boils, remove and pour over the dhokla.

slice and serve with green chutney.

Quick Dosa, no grinding/ fermenting !

Dosa is a favourite dish not just among those from the southern states of India, even the north Indians love dosas. For all dosa lovers, when not having time to grind, here is the quick version of your favourite dish. 

Ingredients

suji/ semolina 1 cup roasted or roast for 2-3 minutes

curd 1 cup 

water 1/2 cup

salt to taste

jeera 1/2 tsp

green chili finely chopped 1 (optional)

oil to cook

baking soda 1/2 tsp 

 

Preparations

Mix the roasted suji if you have, with curd and water to a smooth batter along with salt , jeera, and green chili. In case you don't have roasted suji, roast lightly for 2-3 minutes, then add the rest of the ingredients mentioned above. 

Just before making dosa, mix in baking pdr, whisk well. 

Heat a tawa well, grease with oil, spread the batter to make a thin dosa, put some oil all around, cook on medium heat, till the bottom is brown or crisp as per your taste.

flip it over, spread little oil if needed, cook for another 60-90 seconds.

Serve your crisp hot dosa with coconut chutney, milagai podi.

Leftover Rice? Turn It Into Soft, Fluffy Gujarati Dhokla

Leftover rice from last night often ends up becoming fried rice—or sitting forgotten in the refrigerator. But with a few simple ingredients, you can give it a delicious makeover. Turn that extra rice into soft, spongy dhokla for a quick and satisfying breakfast.

This easy recipe uses cooked rice, curd and semolina to create a light, fluffy texture. Add a classic mustard seed and curry leaf tempering, and serve it warm with green chutney.

Ingredients You’ll Need

For the dhokla batter:

1 cup cooked rice

1/2 cup curd

1/2 cup semolina (sooji/rava)

2 green chillies, finely chopped

Salt to taste

Eno fruit salt, as required

A little red chilli powder

Water, as required

Oil for greasing

For the tempering:

Oil

Mustard seeds

Asafoetida (hing)

Green chillies

Curry leaves

Sesame seeds

Sugar and water, for a mild sweet-and-tangy finish

Preparations 

Step 1: Prepare The Batter

Add the cooked rice and curd to a blender and grind until relatively smooth. Transfer the mixture to a bowl, add semolina and mix well.

Let the batter rest for around 10 minutes so the semolina has time to absorb moisture.

Meanwhile, heat water in a large kadai or steamer and grease a dhokla plate with a little oil.

Step 2: Get The Consistency Right

After 10 minutes, check the batter and add a little water if required. The consistency should be neither too thick nor runny—aim for something similar to an idli or dosa batter.

Add finely chopped green chillies and salt and mix. Just before steaming, add the Eno and gently combine it with the batter. Avoid overmixing once the Eno goes in.

Step 3: Steam The Dhokla

Immediately pour the batter into the greased plate and sprinkle a little red chilli powder over the top.

Place the plate inside the preheated steamer or kadai, cover and steam for around 15–20 minutes, or until the dhokla is cooked through. You can insert a toothpick or knife into the centre; it should come out clean.

Switch off the heat and allow the dhokla to cool slightly before cutting it into squares or your preferred shape.

Step 4: Add The Tempering

Heat a little oil in a pan. Add mustard seeds and allow them to crackle. Follow with a pinch of hing, green chillies, curry leaves and sesame seeds. Sauté briefly until aromatic.

Pour this hot tempering evenly over the steamed dhokla.

Step 5: Give It A Sweet-Tangy Finish

For extra moisture and a mild sweet-and-tangy flavour, dissolve a little sugar in water and drizzle the mixture over the dhokla. Let it soak in for a few minutes.

Top with the tempered green chillies and serve your leftover rice dhokla warm with green chutney. It is an easy way to turn yesterday’s rice into a completely different breakfast while cutting down on food waste.

Tip: If using leftover rice, make sure it was refrigerated promptly after the previous meal and has been stored safely. Avoid using rice that has been left at room temperature for several hours.

Poha/ Avil Vada

 Ingredients

  • 1 cup poha / aval, thick
  • ¼ cup curd/ yogurt, thick
  • ¾ tsp salt
  • ½ onion, finely chopped
  • 1 green chilli, finely chopped
  • ½ tsp ginger paste
  • few curry leaves, finely chopped
  • 2 tbsp coriander, finely chopped
  • 2 tbsp rice flour
  • oil for frying
  •  

    Preparations

    place a sieve and rinse 1 cup poha with enough water.

    transfer the washed poha into a large bowl.

    add ¼ cup curd, ¾ tsp salt and mix well.

    rest for 10 minutes or until poha softens well.

    mix and mash well making sure the poha is softened.

    add ½ onion, 1 chilli, ½ tsp ginger paste, few curry leaves and 2 tbsp coriander.

    mix well forming a dough.

    further, add 2 tbsp rice flour and mix well absorbing excess water.

    pinch a ball sized dough and flatten slightly.

    deep fry in hot oil keeping the flame on medium.

    stir occasionally, making sure the vada is cooked uniformly.

    fry until it turns golden brown and crisp.

    drain off over kitchen paper to remove excess oil.

    finally, enjoy poha vada with tomato sauce.

    ps- I'm sure that this can be tried in Air Fryer, instead of frying, make small vada, put drops of oil or spray or brush with oil and fry @ 200 C for 10 minutes, in between flipping it over, OR let them fry as per your taste.

    Want to eat healthy without giving up taste? Nutrition coach shares simple ways to make Indian food better

     

    Healthy eating doesn’t have to mean boring food. Culinary nutrition coach Eshanka Wahi shares how to make everyday Indian meals more nutritious and delicious.

    When people hear the words “healthy food,” many immediately picture a bowl of salad or a meal that looks uninteresting. That idea has made healthy eating  feel like a compromise for many people. But nutritious food doesn’t have to mean giving up taste. From dal and chilla to homemade snacks, spices, chutneys and traditional recipes, Indian cooking already offers plenty of nutritious ingredients. The key is knowing how to combine them, how much to eat and how to make them enjoyable.

    In an interview with HT Lifestyle, Eshanka Wahi, Dubai & Delhi-based Culinary Nutrition and Holistic Wellness Coach and Founder of Eat Clean With Eshanka, explains how people can make everyday Indian food more nutritious without compromising on flavour. 

    “Healthy food doesn’t have to mean giving up the flavours you enjoy. The idea should be to make the food you already eat more balanced and nutritious, rather than completely changing your meals,” Eshanka says.

    Healthy doesn’t mean boring

    “One of the biggest mistakes people make while trying to eat healthy is removing everything they enjoy from their plate. Instead of completely changing familiar meals, small changes in ingredients, preparation and combinations can make them more nutritious without taking away their taste,” she says.

    “For example, a regular chilla can be made with vegetables and paired with curd or another protein-rich accompaniment. Homemade snacks can also be used instead of reaching for packaged options every time hunger strikes. The goal isn’t to make every meal perfect. It is to make everyday food nourishing enough to support health while still being something people actually enjoy eating,” Eshanka adds.

    Indian food is healthier than we think

    “Indian food itself isn’t necessarily the problem. The quantity, frequency and combination in which we eat it also matter. Indian food is healthy; we just need to change the way we eat it,” Eshanka explains.

    “Take besan as an example. Besan can be a nutritious ingredient, but having besan pakoda, followed by besan chilla and then another besan-based snack on the same day can mean relying too heavily on one ingredient. Even a nutritious food needs to be part of a varied diet,” she says.

    “The same principle applies to other foods. Instead of asking whether a particular Indian food is ‘healthy’ or ‘unhealthy,’ it is more useful to look at the overall meal and how different foods are balanced throughout the day,” Eshanka adds.

    Tasty alternatives can still add nutrition

    “Healthy alternatives don’t have to be limited to salads or plain food. There are plenty of homemade options that can satisfy cravings while also adding useful nutrients to the diet. For example, moong-based snacks such as moonglate can be included as a protein-rich option,” Eshanka says.

    “For someone craving something sweet, homemade date-based chocolates made with ingredients such as dates, nuts and seeds can be an alternative to some packaged sweets. These options can also be useful for families with children,” she adds.

    “Homemade versions allow parents to experiment with ingredients while keeping familiar flavours and textures. Another practical approach is preparing certain homemade snacks in batches. Depending on the recipe and storage method, some preparations can be made ahead of time and stored for several days or longer. This makes it easier to have a homemade option ready instead of relying on packaged snacks when there isn’t enough time to cook,” Eshanka explains.

    Apple-Plum-Raisins-Sunflower Egg-less Cake


    I wanted to try this cake since some days. My own idea. Plums were not too sweet, I chopped and mixed them with sugar, along with finely chopped apples.

    Ingredients

    plums 5 finely chopped

    apple 1/2 finely chopped, both the fruits were mixed with sugar well and soaked for almost 2 1/2 hours. 

    raisins washed and soaked 2 tbsp, mixed with the fruits

    sunflower seeds 2 -3 tbsp

    all purpose flour about 3/4 cup

    baking pdr 1 tsp

    baking soda 3/4 tsp

    salt little

    banana mashed 2 tbsp

    sugar 1/2 cup or as needed

    vanilla essence 1 tsp

    coconut oil 2 tbsp +

    milk 2 tbsp

    curd 1 tbsp

     

    Preparations

    in bowl I added the soaked fruits

    added baking pdr and baking soda with salt to the fruits, it just started expanding, that I had to shift it to a bigger bowl

    then added oil, milk,  flour about 3 heaped tsp at a time, mixing well, added sugar ,added more flour mixed well, continued till I got the desired consistency which should be thinner than the normal cake batter

    added essence and seeds, mixed well.

    greased 2 micro-safe glass plates, poured the mixture, micro high for 4 minutes, after 1 plate was done, I baked the second plate for 4 minutes.

    once removed, with a knife turned around the corners, the cake easily came out when I tapped it onto a plate, cooled a little, then cut into pieces. 

    due to slightly sour plum,when you get the plum pieces  mixed with the sweetness of the cake, it tastes better.

    Suralichi Vadi

     What is Suralichi Vadi?

    Also known as Surali Chi Vadi or Surali Vadi, this classic Maharashtrian recipe is made by cooking a smooth batter of gram flour and yoghurt until thick. The cooked mixture is then spread into a thin layer, cooled, cut into strips and carefully rolled into delicate spirals.

    The finished rolls are topped with a fragrant tempering and garnished with grated coconut and chopped coriander, giving the dish its signature aroma and fresh taste.

    Its biggest highlight is its soft, melt-in-the-mouth texture. The yoghurt lends a mild tang, while the tempering adds crunch and depth of flavour.

    Ingredients

    For the batter:

    1 cup gram flour (besan)

    1 cup plain yogurt

    2 cups water

    Salt to taste

    A pinch of turmeric

    1–2 finely chopped green chillies

    1 tsp grated ginger

    1 tsp lemon juice

    Optional: A small amount of sugar for a sweet-tangy balance

    For the tempering:

    1 tsp oil

    1/2 tsp mustard seeds

    1/2 tsp cumin seeds

    A pinch of asafoetida (hing)

    A few curry leaves

    1–2 slit green chillies

    For garnish: Freshly grated coconut Chopped coriander leaves

    How To Make Suralichi Vadi

    Step 1: Prepare A Smooth Batter

    Whisk together the gram flour, yogurt and water until completely smooth. Make sure there are no lumps, as they can affect the texture of the vadi. Stir in the salt, turmeric, ginger and green chillies.

    Step 2: Cook The Mixture

    Transfer the batter to a heavy-bottomed pan and cook over medium heat, stirring continuously. This prevents the mixture from sticking and helps it thicken evenly.

    Once it reaches a spreadable consistency, remove it from the heat and quickly mix in the lemon juice. If you like a hint of sweetness, add a little sugar at this stage.

    Step 3: Spread It Thin

    Immediately pour the hot mixture onto a greased steel plate, marble slab or another smooth surface.

    Using a spatula or the back of a spoon, spread it into a very thin, even layer. Work quickly, as the mixture begins to set as it cools.

    Allow it to cool for a few minutes until firm.

    Step 4: Roll The Vadi

    Cut the set layer into long strips using a knife, then gently roll each strip into neat spirals.

    Your Suralichi Vadi is now ready for the final touch.

    Step 5: Prepare The Tempering

    Heat oil in a small pan and add mustard seeds and cumin seeds. Once they begin to crackle, add asafoetida, curry leaves and green chillies.

    Once it reaches a spreadable consistency, remove it from the heat and quickly mix in the lemon juice. If you like a hint of sweetness, add a little sugar at this stage.

    Step 3: Spread It Thin

    Immediately pour the hot mixture onto a greased steel plate, marble slab or another smooth surface.

    Cut the set layer into long strips using a knife, then gently roll each strip into neat spirals.

    Step 5: Prepare The Tempering

    Heat oil in a small pan and add mustard seeds and cumin seeds. Once they begin to crackle, add asafoetida, curry leaves and green chillies.

    Pour this aromatic tempering over the rolled vadi and finish with grated coconut and fresh coriander.
