Mumbai-style Paneer Frankie

  Paneer Frankie from spicecravings.com 

 Ingredients

For filling

Paneer cubes 200 gm

Onion 1 finely chopped

Capsicum 1 finely chopped

Tomatoes 2 finely chopped

Ginger-garlic paste 1 tsp

Jeera / cumin ½ tsp

Turmeric pdr ½ tsp

Red chili pdr 1 tsp to taste or add green chilies chopped

Garam masala 1 tsp

Chaat masala 1 tsp

Salt to taste

Roti/ tortillas 4

Butter for roasting

Oil 1 tbsp

 

Preparations

Heat oil in a pan, add cumin, then add ginger-garlic paste roast for another minute, add onion, capsicum, tomatoes cook for 2-3 minutes along with paneer, remove

Put butter in a pan, and toast roti, spread coriander-mint chutney, filling, top with pickled onion.

Wrap the roti tightly, toast it till golden.

Wrap the roll in paper napkin, folded from down to prevent the filling falling out.

Enjoy your Mumbai- street style Frankie with chutney or ketchup as desired

Club kachori

INGREDIENTS 


For The Dough:

All Purpose Flour  1 cup

Semolina  ¼ cup

2-3  tbsp Ghee

 Salt to taste

 Water as needed for kneading

 

The Filling:

Medium Sized Potatoes, Boiled And Mashed  1Cup

cumin Seeds ½ tsp

Ginger Garlic Paste 1 tsp

Green Chilies   2-3 Chopped or to taste

Turmeric Powder ½ tsp

Red Chili Powder to taste

Salt to taste

 

Oil For Deep Frying

Tamarind Chutney And Green Chutney For Serving

 

Cooking Directions

.Prepare the dough by mixing all-purpose flour, semolina, ghee, and salt. Rest the dough for 30 minutes.

 

.For the filling, cook mashed potatoes with spices, green chilies, and ginger-garlic paste.

 

.Divide the dough into small balls and roll them into small discs. Place a spoonful of filling in the center and seal the edges.

 

Deep fry the kachoris until golden brown and crispy.

 

.Serve hot with tamarind chutney and green chutney.

 

Cooking Tips

·        Make sure the oil is hot enough before frying the kachoris to ensure they turn out crispy.

·        You can add roasted cumin powder and amchur (dry mango powder) to the filling for extra flavor.

·        Serve the kachoris immediately after frying for the best taste and texture.
