The secret isn't fancy ingredients—it's a few simple kitchen tricks. With the right method, you can make homemade chutney that looks just as good and stays fresh for days.

Skip Water, Add Ice Cubes Instead: One of the biggest mistakes people make is adding water while grinding the chutney. Instead, add 1–2 ice cubes to the blender. The ice keeps the blender from heating up, helping preserve the natural green color of coriander and mint. The result? A brighter chutney that stays fresh and doesn't turn black quickly. 

Lemon And Fresh Green Chillies Make All The Difference: For that authentic restaurant-style taste, use fresh, spicy green chillies instead of milder ones. Once the chutney is ready, squeeze in a little fresh lemon juice. It not only adds a refreshing tang but also helps slow down discoloration, keeping the chutney looking greener for longer.

Add A Little Mustard Oil For Richer Flavour: Add 1–2 teaspoons of mustard oil while grinding. It gives the chutney a smoother texture and a deeper, more robust flavour that instantly elevates the taste.

Fresh Herbs Are The Real Game-Changer: The quality of your chutney depends on the freshness of the herbs. Always use fresh, crisp and bright green coriander and mint leaves. Avoid wilted leaves, as they can affect both the color and flavor. If desired, you can add a tiny pinch of turmeric to slightly enhance the green hue—just don't overdo it, as it can alter the taste.

Store It The Right Way: Even the best chutney can spoil quickly if stored incorrectly. Transfer it to a clean, airtight container and refrigerate immediately. Street-Style South American Corncob

 Ingredients

Open the corn, pull back the husk, remove all silks, keep the husk intact.
Tie the husk on the other end.
Boil the corns in salted water for 8-10 minutes.
Drain the corns and keep aside.
In a mixer jar, blend chilled milk cream, chilled vegetable oil, 1 tsp lemon juice, salt and mustard seeds, together.
Blend the mixture into a thick paste. If it isn't thick enough, refrigerate it after blending.
Apply soft butter over both the corns, entirely.
Afterwards apply a thick coat of mayonnaise over it.
Sprinkle few chopped parsley over the corn cobs.
Sprinkle smoked paprika and garlic powder.
Sprinkle grated cheddar cheese all over it.
Lastly, squeeze lemon juice over each cob.

Yoghurt with cucumber / Cucumber Raita

 Ingredients

1 cup plain yoghurt
1/2 cup cucumber, grated or finely chopped
1/2 tsp roasted cumin powder
1/2 tbsp rock salt
1 tbsp fresh coriander, chopped
lime juice optional as per taste 
 
How to make it:

Mix the yoghurt, cucumber, roasted cumin powder, rock salt and coriander in a bowl. Chill for a few minutes if desired and serve fresh. 

This can be eaten plain as a summer snack or you can have with rice dishes- pulao, veg. biryani, mixed veg rice.

Crunchy peanut and moong salad

 Ingredients

¾ cup boiled whole green moong

½ cucumber, chopped

½ carrot, grated

½ capsicum, sliced

A handful of cabbage, shredded

1 tbsp roasted peanuts

1 tsp peanut butter

1 tsp grated ginger

Lime juice

A splash of water

Chilli flakes and salt

How to make it:

Whisk the peanut butter with ginger, lime juice, salt, chilli flakes and enough water to make a pourable dressing. Combine the moong and vegetables, toss with the dressing and finish with roasted peanuts.

Sesame tofu and vegetable noodles- Anti-inflammatory food

Ingredients 

75 g wholewheat or soba noodles

100 gm firm tofu, cubed

1 cup sliced vegetables such as cabbage, carrot, mushrooms and capsicum

1 tsp sesame oil

1 tsp low-sodium soy sauce

1 tsp grated ginger

1 tsp sesame seeds

Lime juice

salt to taste 

How to make it:

Cook the noodles according to the packet instructions. Sear the tofu with a teaspoon of sesame oil in a hot pan until golden, then add the vegetables and ginger. Toss in the noodles and soy sauce. Finish with sesame seeds and lime juice.

Black Eyed Pea Salad

 black eyed pea salad recipe southern corn cucumbers red onions smoky smoked paprika vinaigrette 

Ingredients

  • 3 cups cooked black eyed peas (about two 15 ounce cans, rinsed and drained)
  • 1 cup corn
  • 1/2 cup chopped red onion
  • 2 tomatoes , seeded and diced
  • 1 cup cucumber , seeded and diced
  • 3 green onions , chopped
  • For the Dressing:
  • 1/4 cup apple cider vinegar
  • juice of 1 lime
  • 2 tsp sugar
  • 1 tsp kosher salt
  • 1/4 tsp  freshly ground black pepper
  • 1 1/2 tsp cumin pdr
  • 3/4 tsp coriander pdr
  • 3/4 tsp smoked paprika
  • a few dashes of hot sauce , according to heat preference
  •  

    Preparations

     Combine the beans and vegetables in a large bowl. Whisk together the vinaigrette ingredients and pour over the mixture. Stir to combine. Refrigerate for at least 4 hours before serving. Enjoy as a salad, side dish or as a salsa with corn chips.

    Anti-inflammatory Powerful Mixture For Strong Bones

     Ingredients and Preparations

    Flax seeds 100 gm  are good for joints, as they’re high on Omega-3 fatty acids.  Powder the seeds

    Black sesame seeds 100 gm contain 60% more calcium than white ones and 2-3 times as much iron. Sesame seeds are good for joints due to its exceptionally high content of calcium, magnesium and phosphorus, which strengthen bone tissue. Powder the sesame seeds add to the powdered flax seeds

    Pumpkin seeds 50 gm powder. Zinc from pumpkin seeds is important for protein synthesis and bone formation. Mix all the 3 ground seeds well in a bowl.

    Soak 50 gm raisins in hot water for 10-15 minutes. Add 1 tsp of baking soda to kill bacteria. Raisins are good for the joints thanks to their high content of boron, calcium and antioxidants. They strengthen bones, reduce inflammation and lower the risk of osteoarthritis.

    Regular consumption contributes to the maintenance of bone density and cartilage elasticity.

    Ginger 6-7 cm long, peel it. Ginger is an effective natural remedy for joint health with strong anti-inflammatory and pain-relieving properties. It reduces swelling, improves joint mobility and helps with arthritis and osteoarthritis. Ginger warms, promotes blood circulation and supports cartilage regeneration. Grate it and add to a blender.

    Lime 1 juice. Wash the lemon peel thoroughly with water and baking soda. Lemons are good for the joints due to their high Vitamin C content. Vitamin C helps reduce inflammation, strengthens connective tissue and dissolves acid crystals which cause pan in arthritis and gout.

    Cutt the lemon into pieces and remove the seeds.

    Rinse the soaked raisins under running water and add them to the ginger and lemon.

    Puree the lemon, raisins and ginger using a hand blender or a grinder. Add this mixture with the dry powder, add honey 200 ml. Honey is beneficial for the joints due to its anti-inflammatory properties, its pain relieving effect and its blood circulation-enhancing effect.

    Turmeric pdr 1 tsp add to the rest of the ingredients.

    Thanks to its active ingredients curcumin, turmeric is a powerful, natural anti-inflammatory and antioxidant that effectively relieves pain, swelling and stiffness in joints in cases of arthritis, arthrosis and osteochondrosis.

    Add little black pepper powder to activate the curcumin. Mix all well.

    Take this mixture 1 tbsp twice a day to strengthen joints and reduce bone inflammation.

    Store the mixture in an airtight container in the refrigerator.
