Laapsi or Fada Laapsi

 Laapsi or Fada Laapsi, is a common sweet prepared in Gujarati households. It is commonly prepared as a ‘Prasad’ or a holy offering at religious events. It is a simple and hearty sweet that is also nutritious. Prepared using broken wheat, it is a healthy sweet. 


Ingredients: 

  • 1 cup dalia (broken wheat) 
  • 3 tbsp ghee 
  • ½ sugar 
  • 10 almonds (soaked and cut into thin slivers) 
  • ¼ tsp cardamom powder 
  • 3 cups water

Method: 

  1. Place the pressure cooker on medium flame, and add the ghee to it. Once the ghee melts, add the dalia. 
  2. Reduce the flame and roast the dalia in ghee on a low flame for at least 10 minutes stirring occasionally. Roast until the dalia becomes aromatic and lightly golden. You will also see the ghee separating from the dalia. 
  3. At this point, add the sugar and cook it until the sugar begins to melt. 
  4. Add the cardamom powder and add 3 cups of water to it. Mix everything well. 
  5. Shut the lid of the pressure cooker securely and cook it for about 3-4 whistles. 
  6. Let the natural pressure be released, then slowly open the pressure cooker. 
  7. Check if the laapsi is fully cooked. 
  8. Remove the laapsi from the pressure cooker into the serving bowl, garnish with almond slivers and enjoy while warm.

Badam milk with badam peda !

Badam / almonds can be eaten plain, made into badam milk, badam halwa, bari, cake, the list will be endless, other than eating plain, soaking it overnight to get the maximum nutritional  benefits of badam.

 

INGREDIENTS

badam 2 cups soaked over night

cardamom pdr little

chopped nuts 4-5 tbsp

honey 2 tbsp

jaggery pdr 2-3 tbsp


METHOD

peel the badam, grind to a smooth paste adding water, take out the milk, by putting the ground badam paste in a muslin cloth and squeeze out the milk completely.

Keep this milk on low flame, stirring from time to time till gets thick.

then add honey,cardamom pdr., add some nuts mix well. let it cool.


Peda

the badam solid that was there after squeezing out the milk, is full of fiber.

put it on a plate, add some cardamom pdr, and pdr jaggery

mix well with your palm till it becomes a smooth dough.

add some nuts, roll into small balls, flatten it, make a depression with your thumb, out some chopped nuts in the depression and serve.

Moong dal halwa

 INGREDIENTS

Moong dal yellow split 1 cup, wash it 3 times well, drain completely, then put it on a pan , roast it in medium flame stirring to a light brown colour, remove and cool. Powder it fine in a mixer jar.

In a pan heat 2 tbsp ghee, roast 2 tbsp cashew chopped, remove, in the same ghee, roast 1 tbsp rava with 1 tbsp besan. Fry well till nice aroma comes. Then add the powdered dal, mix well, till all the ghee is absorbed. Then add 2 1/2 cups of water, little at a time, stirring well on low flame, keep stirring well till all the water is absorbed and it comes together as a mass.

Now add 1 ½ -2 cups sugar as per taste, keep stirring on low flame for the sugar to get absorbed, no need to add any water, as it gets thick, you may add 1-2 tbsp ghee, little at a time. Once it all comes together, add little cardamom pdr, mix well along with little ghee, adding ½ the quantity of the fried nuts, reserving the rest for garnishing. To know if the halwa is done, when you take little halwa in the tsp and drop it down if it falls without sticking to the spoon, means it is done, ready to serve.

Sweet chips with raw bananas

 Ingredients

METHOD
Peel the banana skin.
Now, cut thin slices with the peeler and fry it in hot oil.
In another vessel, make thick syrup of sugar and water.
Add cardamom powder and saffron strands to the syrup.
Remove it from the heat and keep aside.
Add fried banana slices to the syrup and stir till sugar coats the chips.
Add chopped almonds and cashew nuts over it.
Decorate it with a few fresh rose petals.

Dhaiwara Dessert

INGREDIENTS
2 cups flour 
1.5 tsp baking powder 
2 tbsp butter, ghee
3/4 cup yogurt/ curd
1/2 tsp cardamom/elaichi powder 
Pinch of salt

METHOD
You basically combine all the ingredients and knead for a few minutes
Roll out and cut into circles and fry until they puff up and turn golden brown
Dip into syrup and roll in desiccated coconut 

Syrup
1 cup sugar 
1/2 cup water 
A few drops of rose water 
2 cinnamon sticks 

Boil together for about 5 minutes until you are able to evenly coat the back of a spoon

Gulab jamun premix cake

 INGREDIENTS

 1 cup milk
1/2cup refined oil
1/2cup sugar(I personally like less sugar…one can take 3/4 sugar for extra sweetness)
3/4cup maida / all purpose flour
3/4 premix gulab jamun mix
1/2tsp baking powder
1/2 tsp baking soda
1/2tsp Elaichi powder / cardamom pdr.

Wet ingredients

Mix milk and sugar till it dissolves than add oil mix with beater till it combines

Sieve maida ,premix,baking powder,baking soda add it to wet ingredients mix it for 5/10mins
Add elichi powder

Add chopped almonds add cashew


INSTRUCTIONS
Grease baking tin ad pour batter decorate with almonds
Bake it for 30 minutes at 150deg
Baking time ad temperature may differ as per OTG

I have baked till it gets nice brown colour

U can make sugar syrup (chachni)ad pour it by making small hole on cake

We prefer less sweet so I have skipped this last step.
