Sandwich Dhokla + coriander chutney

INGREDIENTS  and METHOD

makhana 1 cup

flaked rice/ avil 1 cup

rice 1 cup

chana dal  1 cup

urad dal  1 cup

mix all wash well, soak in just enough water for 4 hours

add to the mixer jar and grind if need be adding little water to a fine thick  paste

put in a bowl, beat well for 3 minutes, cover and keep to ferment overnight

 

beat well the fermented batter for 3-4 minutes

add salt to taste and sugar 1 tsp

hing little

oil   1 tsp mix well

pour half the batter in a greased dish/ tray and steam for 5 minutes

chutney

coriander leaves 1 cup

green chilies to taste

rock salt to taste

ginger 1” cut

jeera pdr 1 tsp

amchur pdr 1 tsp

salt

little water to grind

peanuts 2-3 tbsp

make thick chutney

add 1-2 tbsp batter to chutney, mix well, spread on the steamed dhokla

steam for 2 minutes covered

then spread the remaining batter, cover and steam for 10 minutes

once cool, cut into desired shape

seasoning

oil 1 tbsp

mustard seeds 1 tsp

white sesame seeds 1 tbsp

slit green chilies 2-3

curry leaves, hing a pinch

spread on the dhokla

Low calorie breakfast ideas

 Breakfast is the most important meal of the day. It must provide enough nutrients to help us carry on with our work well. It is very important for children to help them concentrate what the teacher is teaching in the class. You may often find some children are sleeping or looking very tired in the morning itself. If you ask them, you'll come to know that they've not had a meal since last night. Without energy, how will the brain work? That's the reason that the Indian government has started the mid-day meal scheme in all government schools. Most children come to school to at least get one proper meal a day.

Some nutritious breakfast foods are-

Poha, made with flaked rice. It can be made with very nutritious by adding along with onion, potato, carrot, peas, peanuts, curry leaves, coriander leaves, cauliflower, beans and last squeeze some lemon juice in it after taking off from the gas. Never squeeze lime when the food is on the gas, as the vitamin C is lost then. Flaked rice is rich in iron, hence to absorb the iron from it, you need Vitamin C. It can be add with some curd to get more protein, as our body absorbs milk protein easily.

Oats Upma- this again is not only full of fiber, but nutrients, zinc is there in oats along with other nutrients. By adding veges and nuts, one can have a very filling breakfast.

Idlis- it is the best steamed food, highly nutritious, as it has carbs, protein, being fermented, protein is enhanced, then prebiotics, easily digestible, having with sambar and chutney makes it a complete meal, as sambar has dal and veges, chutney has dal, coconut, green chilies- so you get most Vitamins A from carrots and pumpkin in sambar, B in dals, green chilies C, curry leaves E.

Vegetable dalia- this is made from broken wheat, lots of protein, fiber, vitamins with veges in it. 

Ragi dosa- dals= B complex, ragi- calcium and iron, with chutney and sambar will make it a complete meal. You can make it stuffed with some veges, onion, or add some paneer and tomatoes with green chilies, to make it a very filling breakfast.

Oats idli, rice roti, stuffed rotis- paneer, carrot, potato n peas and so on. Or palak/ methi roti.

All the above can be made with very less oil, very filling breakfast, that will help one to concentrate on their work/ studies till lunch time

Avil ammni kolakattai with masala

 INGREDIENTS

Flattened rice/ poha/ avil, thick variety

Take 1 ½ cups of avil, wash and add little water to soak well, once soft, then remove water if it is there, then grind ½ the quantity of soaked avil well without adding any water. Mix well adding salt to taste.

In a kadai add 1 ½ tbsp oil, add ½ tsp mustard seeds, 2 tsp chana dal, 2 tsp urad dal, mix well, once golden add ½ tsp hing, chopped red/green chilies to taste, along with 1 tbsp chopped ginger and 1 tbsp chopped curry leaves, add 1 medium size onion finely chopped, fry till it is light pink, then pour it over the mixed avil well.

Put the pressure cooker with idli plates or the  idli vessel, spread a wet cloth over the plates and put the rolled out avil balls to steam for 5 minutes. Cool it well.

In a kadai, heat 2 tbsp oil, put ½ tsp mustard seeds, ½ tsp jeera, 1 tsp urad dal, fry well till dal is golden, add little hing, finely chopped curry leaves, add 1 big onion finely chopped, once onion turns brown, add the paste of 1 tomato, along with little salt for onion-tomato mixture, fry for 3 minutes, add chili pdr to taste, mix all well, till it reduces, all the water has evaporated and the oil starts oozing out from the mixture. Now add the steamed avil balls, mix well so that the balls are well coated with the masala, serve hot.

Mak-avil halwa



I  wanted to make something different to take for my sister's family. I wanted to test if they can find the ingredients in it. If it was my eldest brother by rolling his tongue, he'ld  guess the ingredients. I don't have a sharp tongue like him or my son-in-law. When I gave to my friends here, they're trying too guess if it was milk halwa, yes as it had lots of milk in it.

INGREDIENTS

milk almost 2 litres

makhana / lotus stem/ fox nut  1 cup

avil/ flattened rice 1/2 cup

pottukadalai/ roasted dal 1/2-3/4 cup

ghee/ clarified butter 5-6 tbsp

sugar  6-7 tbsp as per taste

METHOD

in a heavy pan, I roasted makhana for about 2 minutes stirring continuously on medium flame till I felt it was roasted, I removed it to a plate

in the same pan, I roasted avil for about 2 minutes, put in the same plate with makhana

I wiped the pan well, added about 300 ml milk, kept it on low flame, kept stirring every few minutes, once it was thickened, I added more milk ( another 300+ ml), kept stirring time to time.

added another 300 ml approximately, kept it to boil, then added another 300 ml or more, kept stirring.

I finely powdered makhana, avil and pottukadalai .

In about 300 ml milk, I gradually added the powder, mixed it well, added the rest and mixed well.

Added this mixture to the boiling milk, long with sugar and kept stirring more often or it may form lumps. I kept the gas at minimum heat, so it won't get stuck down.

once it became a little thick, added a tbsp of ghee, kept stirring till the ghee got fully incorporated.

stirred more often now, doing other work nearby, once it got thicker, added some more ghee, mixed well.

greased a big plate with little ghee, as the mixture thickened, leaving the sides, added more ghee, mixed well, switched off the gas, kept stirring well for another 30 seconds

then spread it evenly on the plate, leveled it well, kept it to set for about an hour or more, as I got busy doing my work.

Cut into desired shape and serve, you may decorate the top with some roasted nuts, which though I wanted to do, was extremely busy with 2 other important work, which made me tired too. Sadly at the end of the day while distributing in the dining hall to my friends, I fell down, luckily not on the floor, kept my hands down for support, so managed to get up.

Now after an hour, can feel the pain in my left foot, knee, left lower back and my hands ! I'm still wondering what made me fall down, was it sudden giddiness or buckling of my knee and ankle?

Fox nut ( makhana)+ avil halwa

 INGREDIENTS

 foxnut / makhana  1 cup

avil / flaked rice    1/2 cup

milk  300 ml

sugar 2 tbsp or more as per your taste

gur / molasses  2 tbsp

nuts

ghee 1 tbsp

milk  300 ml

METHOD

dry roast makhana / fox nut stirring continuously for 2-3 minutes till crisp, remove n cool.

dry roast avil till crisp another 2-3 minutes, once cool, powder it with makhana

In the same pan, wipe well, add milk, let it boil well

sprinkle the nut powder, little at a time, stirring continuously to prevent lumps

once all the powder is mixed well without any lumps, add sugar and gur, mixing well.

Keep stirring continuously, add little ghee , mix well till it is fully absorbed

add remaining ghee, nuts, keep stirring till it leaves the sides of the pan

spread on a greased plate, to set, keep it in the fridge.

It is an ideal dessert, as it contains, fox nuts and avil, which is healthier than rice.

I kept it in the fridge to set, then cut into desired shape , eat and store the remaining halwa.

As the sugar was less it came as halwa, if more sugar is added, it would have come as barfi. I prefer my dessert to be mildly sweet, as then I can enjoy it.

Avil payasam/ kheer with mangoes

INGREDIENTS

avil 1/2 cup

milk 1/2 litre

water 200 ml

sugar 3 tbsp or to taste

mango chopped one

nuts & raisins 2 tbsp

ghee little to roast

METHOD

wash avil well, add water and part of the milk to boil on medium flame

keep stirring from time to time, once it gets thicker, add some more milk

let it simmer, once thick, add remaining milk, let it boil

as I used the thick avil, it tastes longer to get cooked, once cooked, add sugar to taste

let it boil, till the sugar has well dissolved and it is thick

I added the mangoes, let it boil for 2 minutes, switched off the gas

You can roast some nuts and raisins and add.

serve hot or cold, as it cools, it thickens.

NOTE- I added the mango,as it wasn't very sweet, thought it will taste good with the kheer.

Adding mango is optional, but to make kheer, you can follow rest of the procedure.

Since, the kheer was in demand, I'ld not take photo.

I loved the taste of the kheer with the mango, hope you all too, as I'm sure everyone like mangoes. So, why not try it in a different way !
