How to Effectively Kill Germs on Your Kitchen Sponge

Are you ready to hear something extremely gross? According to research, the average kitchen sponge is home to around 350 different types of horrible bacteria that could potentially make your family very ill. Cleaning your sponge is not as simple as merely rinsing it with soap and water, so if you really want to banish bad bacteria from your sponges, then follow these tips and make sure to use one of the following methods:

1. The Bleach Method 

Grab a bucket and add 3/4 of a cup of bleach to an entire gallon of water. Then, throw your sponge in and let it soak up the liquid for at least 5 minutes. Finally, remove the sponge from the bucket and rinse it well. This method has been found to remove around 99.9% of bad germs. 

2. The Microwave Method 

Place a saturated sponge in the microwave and cook it for a full minute. Then let it cool before removing it from the microwave. This method has been found to remove around 99.9% of bad germs.

3. The Dishwasher Method 

Place your sponge in the dishwasher and turn on the regular cycle. Make sure to finish it on the 'heated dry' option. Like the other methods above, this one has also been found to remove around 99.9% of bad germs. 

4. The Vinegar Method 

To use this method, simply soak your sponge in vinegar for around 5 minutes before taking it out and rinsing with cold water. While not as effective as the other methods, it has still been found to kill 99.6% of harmful germs.

The Difference Between Baking Powder and Baking Soda

It’s always a close shave when you’re cooking something in the kitchen, realize you need baking powder, and you reach for the baking soda instead. Luckily, on most occasions, you manage to catch yourself in time.

The thing is, what would actually happen if you really did pour baking soda into your mixing bowl without realizing the error of your ways? To clear up the confusion, here is all you need to know to clearly distinguish between baking powder and baking soda: 

Baking Soda

Baking soda has many different applications, from cleaning to craft, home remedies and many other DIY reasons. But how can one product be so versatile? The key is in its simplicity. Baking soda is a chemical compound called sodium bicarbonate, which is about as basic an ingredient as you can get. In addition to being an essential, foundational item, it also has high alkalinity to counter the effects of acidic substances. 

Not to bore you with a chemistry lesson, but consider what happens when you mix baking soda with something like vinegar, buttermilk, or lemon juice. A chemical reaction takes place, and this results in carbon dioxide being given off, which can usually be seen in the form of bubbles. 

In essence, then, baking soda is a leavening agent. We use it to create air and create rise, and this effect is achieved when you combine the baking soda with something acidic that will react with it. The effect can also be achieved if baking soda is heated on its own, but this will likely result in a metallic taste that’s often associated with basic pH levels. In addition to helping out with the chemical reaction, acidity allows for air bubbles without the taste problems. 

Baking Powder
Savvy bakers will notice that baking soda is actually contained as a baking ingredient in baking powder, however it’s mixed with other things such as cream of tartar and, on occasion, corn starch. If you notice something in common about these ingredients, then you’re on to something – they’re all acidic. This means that the aforementioned chemical reaction is built right into the baking powder.

Many baking powders that you can buy today actually contain a double-leavening effect, which means that they combine two chemical reactions that occur in succession. The first is an air-building reaction that occurs when dry and wet ingredients are mixed together, and another that occurs when the mixture is heated. 

The fundamental thing you have to keep in mind when it comes to baking powder is the mixture of acidic and basic substances, and the leavening effect that occurs as a result of that. Regardless of whether you use baking powder or baking soda, you primarily need to consider how much “tang” you want to taste and how much air you need. In fact, many professional bakers actually use both in different amounts to achieve different effects.

What it all means to be a home baker
Bad news – you can’t really use baking soda and baking powder interchangeably, and this is because of the extra element that’s contained in baking powder. Although they both have a leavening effect on a recipe, it’s when the leavening actually occurs that represents a crucial difference. 

What do you do when you need baking soda, but only have baking powder? 

Try using two to three teaspoons of baking powder for every teaspoon of baking soda you need. In other words, you need two to three times as much baking powder for the same amount of baking soda to get the same amount of leavening power. Note that you might end up with something a little bitter-tasting, depending on the recipe, when you’re done baking. 

What happens if the problem’s the other way round? 

If you only have baking soda and need to use baking powder, the aforementioned rule goes the other way. So, for instance, if a recipe requires three teaspoons of baking powder, replace with just a single teaspoon of baking soda. Another thing you need to do to get the replacement right is to add an additional acidic element. As a general rule, add one teaspoon of vinegar or lemon juice for every half-teaspoon of baking soda that you add.

How long do baking soda and baking powder last?
 

Baking soda can last for a very long time if stored in a cool, dry place, however baking powder can last anywhere from three months to a year. It will start to go bad quickly if it’s exposed to humidity once it’s open. 

How can you check if baking soda is still okay to use? 

1. Add a quarter-teaspoon of white or apple cider vinegar to a half a cup of hot water. 

2. Drop a bit of baking soda into the hot water . 

 3. If you can see bubbling and fizzing, it’s still okay to use. 

How can you check if baking powder is still okay to use? 

1. Measure out half a cup of hot water. Don’t add vinegar to it. 

2. Drop some baking powder into the hot water. 3. If you can see bubbling and fizzing, it’s still okay to use. 

Conclusion 

As you can see from all of the above, baking soda and baking powder are very similar, but they’re not the same things. Keep their leavening properties, together with the necessity of mixing acidic, in mind, to ensure your untold baking success!

Jackfruit seed Hummus

 Ingredients

 

Method

Clean jackfruit and remove seeds and rinse them.
Place in a vessel with 2 cups of water. There should be at least 1 inch of water above the seeds.
Boil the seeds for 30 mins, until fork-tender.
Let the seeds cool completely. Remove the hard, waxy cover from the seeds. Any brown cover remaining is perfectly edible.
In a blender, combine the seeds with 3 tbsp olive oil, vinegar, chili flakes, salt, and garlic cloves.
Add water as required and blend into a smooth and fluffy paste.
Top with remaining 1 tbsp olive oil and a sprinkle of chili powder. Serve and enjoy with crackers or carrot slices.

Stir Fried Tofu With Rice

Ingredients
  • Cooked Basmati Rice - 3 cups cooked
  • Oil - 3 tbsp
  • Ginger Garlic Paste - 1 tbsp
  • Onion - 1 chopped finely
  • Green Chilli - 2 chopped
  • Cabbage - ½ cup chopped finely
  • Beans - ½ cup chopped finely
  • Carrots - ½ cup chopped finely
  • Capsicum - ½ cup chopped finely
  • Salt to taste
  • Sugar - 2 tsp
  • Soy Sauce - 1 tbsp or to taste
  • Vinegar - 2 tsp
  • For Marination:
    • Tofu - 1 cup cubed
    • Red Chilli Powder - ½ tsp
    • Salt to taste
    • Soy Sauce - 1 tsp

     Marinate tofu with the above ingredients for at least 30 minutes,

    Preparations

  • Mix tofu with the ingredients given, Heat oil in a pan, add tofu and fry till golden, drain and set aside.
  • Now in the remaining oil, add in ginger garlic paste and saute for a min.
  • Add in onions and chillies and cook them for a min.
  • Add in all veggies and toss well. Add salt and sugar and saute them for 5 mins or so.
  • Add in tofu and mix well.
  • Now add in cooked rice and stir fry for 2 mins or so.
  • Add soy sauce, vinegar and mix well. Serve hot.

    Thecha chowmein

    Sometimes the heart simply craves street food, even though our health may say otherwise. However, preparing street-style food at home can be a nice compromise at times, and celebrity chef and MasterChef India judge Kunal Kapur helps us do just that, taking to Instagram on May 15 and sharing his easy recipe for thecha chowmein. 

    Describing the dish, the chef wrote in the caption, “Thecha chowmein is what happens when fiery Maharashtrian flavours meet your favourite street-style noodles. Think garlicky green chilli thecha tossed with hot, glossy chowmein - spicy, bold, and seriously addictive. It’s quick, punchy, and perfect for days when regular noodles just won’t cut it. The heat hits first, then the flavour keeps building, making every bite better than the last. If you love your food with a kick, this one’s a total game changer.” 

    Ingredients 

    For thecha

    Oil - 2 tbsp

    Green chillies - 4

    Garlic cloves - 8-10

    Peanuts - ¼ cup

    coriander leaves- handful

    For noodles

    Oil - 2 tbsp

    Onion, sliced - ½ cup

    Carrot, julienne - ½ cup

    Capsicum, sliced - 1 cup

    Cabbage, shredded - 1 cup

    Noodles, boiled - 2 cups

    Soya sauce - 2 tbsp

    Salt - to taste

    Vinegar - 1 tbsp

    Spring onions, chopped - a handful

     

    Preparations

    To prepare the thecha, heat the wok and then pour in the oil. Add green chilli, garlic cloves, and whole peanuts into the oil. Stir-fry them for three to four minutes.

    Take them out and put them in a mortar and pestle. Grind them up well. While grinding, add fresh, chopped coriander. The final thecha should be a little bit grainy.

    Once again, add oil to the heated wok. When the oil gets warm, add in the thecha and stir fry for 30 to 40 seconds. Make sure that the thecha does not turn completely brown.

    Then add in the thinly sliced onions, julienned carrots, bell peppers, and shredded cabbage. Toss them all in a high flame till the vegetables are cooked.

    Gently add the boiled noodles to the wok, making sure that they are not clumpy. Add in soya sauce, salt, vinegar, and chopped spring onions. Toss it well in high heat for at least three to four minutes.

    The thecha chowmein is ready. Plate it and enjoy.

    Malva pudding with cranberries & ginger

     A traditional South African malva pudding with cranberries & ginger recipe 

     

    Ingredients

    PUDDING:

    • 1 cup of sugar
    • 1 egg
    • 1 Tbsp smooth apricot jam
    • Zest of an orange/clementine
    • 1 cup / 140gms cake flour
    • 1 tsp baking soda/bicarb
    • pinch of salt
    • 1 tsp butter
    • 1 tsp vinegar
    • 1 cup milk
    • 1 Tbsp finely chopped preserved ginger
    • 50 grams cranberries soaked in boiling water for 20 minutes then drained & cooled
    • Ultra Mel Vanilla custard to serve

    SAUCE:

    • ½ / cup cream
    • 75 gm butter
    • 1/2  cup sugar
    • 1/4 cup clementine/ orange juice

    Instructions

    • Preheat the oven to 180 C (350F)
    • Using an electric mixer beat the egg, sugar and jam on medium-high for about 5 minutes
    • In a separate bowl sift the flour, bicarb and salt.
    • Melt the butter in the microwave and then add the vinegar.
    • Whilst the mixer is still going on slow alternate between adding the sifted flour and the milk in parts until it’s well combined.
    • Add the butter and vinegar mixture and the chopped ginger and briefly mix.
    • Empty the batter into a greased baking dish approx 20cm in diameter (glass pyrex or ceramic works well) or a small well-greased bundt cake tin or 8 – 10 well-greased mini bundt moulds.
    • Scatter the drained cranberries evenly over the surface of the batter. It is quite runny so it is better to add it in at this stage so as to avoid it sinking to the bottom of the dish. Gently swirl the fruit into the mix or push it in slightly with a skewer.
    • Cover with foil and bake for 45 mins. If you are making it into a bundt cake you will need to increase the cooking time to about 50 – 55 minutes. For mini bundt, the cooking time can be reduced to 35 – 40 minutes.
    • The pudding is ready when it has an even golden brown colour over the top, so bake a bit longer if it is still pale in the middle
    • While the malva pudding is baking, melt all the sauce ingredients in a small pot on the stove and pour this over the pudding as soon as it comes out of the oven. If you are making a bundt shape, pour about a ¼ of the sauce over, wait a few minutes and then tip it out while it is still warm (run a knife around the middle of the tin to loosen it).

    Notes

    • If you are not using one large flat dish for this malva pudding its quite difficult to pour all the sauce over in one go so I keep some aside to pour over later. Just keep drizzling it over until you can’t any more. Its important that it is kept warm though.

    Mixed Berry Biscuit Cobbler

     Mixed Berry Biscuit Cobbler 

     

    Ingredients  

    4 pounds fresh/ frozen/ thawed mixed berries

     1/3 cup cornstarch
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp granulated sugar more for sprinkling
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup heavy cream
  • 1/2 cup plus 2 tbsp melted unsalted butter cooled and divided
  • 1 tbsp vinegar
  •  
  • Preparations
  •  
    Preheat oven to 375 degrees F/ 190 C.  Brush 1 tablespoon melted butter inside 13 x 9 casserole dish, set aside.  In a large bowl, combine berries, cornstarch and sugar.  If using frozen berries, make sure they are defrosted and drained.  Reserve juice for another treat like mimosas or sparkling sodas.
    Add berry mixture to prepared dish.  In a large bowl, combine flour, baking powder, sugar, salt and baking soda, whisk.  In a measuring cup, add cream 1/2 cup melted butter and vinegar, stir to combine.  Make a well in the center of dry ingredients and add wet ingredients.  Stir gently until combined, don’t over stir.
    Divide dough loosely in bowl into two sections.  Form 6 ping pong size balls, patted down on top with each half of dough.  Place biscuits evenly over surface of berries and brush with remaining butter.  Sprinkle tops of biscuits with sugar.
    Bake in oven for 35-45 minutes, or until lightly golden brown on top.  Remove and let cool for at least 30 minutes before serving.

    Hot and Spicy Pizza Sauce

      

    When you plan on toppings like pepperoni, mushrooms or other savoury meats, the pizza sauce must be spicy to do complete justice to the toppings and base. This simple yet spicy pizza sauce is perfect for that spicy life! 


    Serves: 4 pizzas of 12-inch each

    Ingredients: 

    • 500gm whole tomatoes
    • 2 whole red bell peppers
    • 4 whole red chilies (Guntur chilies)
    • 4-5 minced cloves of garlic
    • 1 medium onion chopped 
    • Salt to taste 
    • 4 tsp olive oil 
    • 2 tsp sugar 
    • 1 tsp vinegar 
    • 4-5 fresh bell peppers

    Preparation: 

    • The preparation method is fairly common and straightforward. Boil the whole tomatoes until they are soft and mushy. Same time, roast the bell peppers on an open flame till they form black blisters on the skin. Scrape off the burnt part of the blisters and chop roughly. 
    • Now take a large skillet, add olive oil, add the minced garlic and cook for a minute, now add the onions and sauté them slightly. Once the onions become translucent add the whole red chilies and sauté them as well. Now add tomatoes gently use a spatula and mash them. Until the tomatoes are soft and mushy. 
    • Now add the chopped red bell peppers and season the sauce with salt, sugar and vinegar. Once the mixture is uniformly cooked and soft, remove it from the flame and allow it to cool. Transfer the contents to a blender and blend into a smooth sauce. Now tear the pieces of fresh basil and add them to the sauce. Transfer the sauce into a glass jar and refrigerate for up to a week.

    Lentils sweet potato baked with dressing

     Sheet Pan Cheeseburger Vegetable Bake 

    Ingredients

     2 cups cubed sweet potatoes OR you may add potatoes 

  • 7 oz firm tofu, pressed and cubed into 3/4 inch cubes
  • 15 oz can chickpeas or lentils, drained. Or any other beans, or 1.5 cups cooked
  • 1 red bell pepper, chopped into 3/4 inch thick
  • 1/2 red onion, coarsely chopped
  • 1/2 to 1 cup veggies of choice, such as broccoli, butternut squash, any seasonal veggies, etc
  • 3-4 tbsp sunflower seeds
  •  
  • For Cheese Burger Dressing
  •  
  • 1 tbsp oil
  • 2 tsp soy sauce
  • 2 tsp vegan Worcestershire sauce
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 tsp oregano
  • 3 tbsp bbq sauce or tomato ketchup+ curry powder
  • 1 tsp prepared mustard
  • 2 tbsp ketchup
  • salt to taste
  • 1/4 tsp black pepper
  • 1/4 tsp onion powder
  • 1/2 tsp garlic powder
  •  
  • For Mayo Dressing
  •  
  • 1/3 cup cashew cream, which is 1/4 cup of cashews blended with 1/4 cup water, or use vegan Mayo
  • 1 tsp vinegar
  • 1/4 tsp garlic powder
  • 1/4 tsp ground mustard
  • 1/4 tsp salt
  •  
  • Preparations

    Chop all of your veggies if you haven't already. Line or grease a large baking dish. Preheat the oven to 400 degrees F (205 c) In a bowl, mix in all of the cheeseburger sauce ingredients until well combined. Reserve 1 1/2 – 2 tbsp of this mixture to use later to drizzle on top. Add the chickpeas, tofu, chopped veggies, and toss well to coat with the cheeseburger sauce mixture, until evenly coated. Drop this mixture into the prepared baking dish, and spread it out. You don't want the mixture to be thicker than double. I like to keep a single layer of the veggies and beans etc, it will give you the best result in terms of crispiness of the big veggies. Bake at 400 degrees F for 35-45 minutes, or until the sweet potatoes are tender to preference, and everything else is starting to get gold and crisp. Sprinkle sunflower seeds on top in the last 5-10 mins of baking To make your Dressing: blend all the ingredients until well combined, taste and adjust flavor by adding more vinegar, salt, etc. You can also use already prepared non-dairy cream, or 1/4 cup vegan mayo instead. To serve, serve individual portions of the veggie tofu bean mixture, and drizzle the mayo on top. Thin out the reserved cheeseburger sauce with a tsp or two of water, and drizzle that as well. Top with some red pepper flakes, and fresh herbs of choice, and serve. You can also serve the tofu veggie mix over a bed of fresh lettuce!
