SPICY SPROUT PULAO

INGREDIENTS

FOR PASTE
ghee  1 tbsp
red chillies  3-4
saunf  1 tbsp
ginger  1 tbsp
onion  1 chopped
fry all well, grind with coconut 3 tbsp and 1 chopped tomato

for pulao
oil  1 tbsp
red chilli pdr.  1 tsp
curd   3 tbsp
moong sprouts or any sprouts you've/ like  1/4 cup
red bean sprouts  1/4 cup
kidney beans/ rajma  1/4 cup
cooked rice  1 cup
salt to taste
coriander leaves  2 tbsp

in a pan, heat oil, add ground masala, chilli pdr, curd, fry well
add sprouts, kidney beans, salt, rice mix well, keep on low flame covered for 3-4 minutes, so that the masalas get well absorbed with rice and sprouts  OR
you can put all in a pan, cover it with foil, keep on sim, over a tava for 5-8 minutes
serve hot garnishing with coriander leaves, papad and raita/ spiced curds

ps- you can use just one sprout also, whatever quantity you want, no hard and fast rule at all

SPROUTS PULAO

INGREDIENTS

moong sprouts  1/4 cup, boiled
kidney beans cooked   2-3 tbsp  boiled
small red beans sprouts   1/4 cup
onion finely chopped   1/4 cup
tomatoes finely chopped  1/4 cup
red chilli pdr. 1 tsp or to taste
ginger-garlic paste   1 tsp
turmeric pdr.  1/4 tsp
asafoetida   1/4 tsp
saunf/fennel seeds   1 tsp
cashew nuts   1 tbsp
raisins   1 tbsp
garam masala pdr.  1/2 tsp
cooked rice   1 bowl or as needed
salt to taste
oil 2 tbsp
ghee 1-2 tbsp

METHOD

in a heavy pan, heat oil and ghee, add saunf, fry well, add onion, fry till light brown
add the paste, tomatoes, chilli pdr., turmeric pdr. fry well with little salt
once the masala os thick, add garam masala, the sprouts, kidney beans, salt, rice mix well, keep on low flame covered for 2-3 minutes, for the masala to be absorbed in rice and sprouts, salt
add some finely chopped coriander leaves
garnish with fried nuts and raisins
serve hot with some raita or spiced curd and roasted papad/ chips
