CORN MINI IDLIS


INGREDIENTS
ghee 1 tbsp
semolina/ rava/ suji  1/4 cup
grated corn   1/4 cup
paneer  crumbs/ cottage cheese  1/2 cup
green chillies finely chopped  2 or to taste
soda-bi-carb  1/4 tsp
fresh coriander leaves finely chopped   2 tbsp
curd   1/4 cup
salt to taste

for tempering
oil  2 tbsp
mustard seeds  1 tsp
curry leaves finely chopped  2 tsp
coriander leaves to garnish

METHOD

roast semolina in melted ghee for a few minutes, cool
add the corn, paneer, chilies, salt, coriander leaves, curd, mix well, keep aside for 10 minutes
add soda-b0-carb before you make idlis, mix well
pour into greased idli moulds, steam and cook for 10 minutes
remove from mould
just before serving, heat oil, add mustard seeds, when it stops spluttering, add curry leaves, then idlis.
serve warm garnishing with coriander leaves, chutney of your choice.
