INGREDIENTS
for middle layer
grated bottle gourd/lauki/ ghia 2 cups
milk 200 ml
sugar 3-4 tbsp
cardamom pdr. 1/2 tsp
nuts 2 tbsp
for middle and top layer
besan / chickpea flour 2 cups
ghee 4-5 tbsp
nuts for decoration
cardamom pdr. 1/2 tsp
brown sugar/ jaggery pieces 1 - 1 1/4 cups
METHOD
first make the middle layer
in a heavy pan, put grated bottle gourd, fry for some time
add milk, once milk starts boiling, add sugar, mix well, keep stirring, cook till it thickens
just before taking off, add cardamom pdr., nuts, mix well
keep aside to cool
for the other layer
in a heavy pan, add ghee, once it melts, add the flour, on low flame fry it till it turns into a nice brown colours and you get aroma
add cardamom pdr., mix well, remove
add jaggery grated, mix it well, as in the heat itself, it will melt and get mixed well
in a greased plate, spread half the mixture of the flour mixture, spread well
spread the bottle gourd mixture evenly over it, let it cool for few minutes
next spread rest of the flour mixture over, spread well, spread some nuts on top, press down well
once it sets, cut into squares, ready to serve.
