ALMOND FUDGE

INGREDIENTS

blanched almonds   1 cup
sugar   2 cups
ghee  2 cups
milk   1 cup
almond essence few drops

METHOD

put the almonds in a mixie, along with milk, blend to a fine paste.
put a cup of ghee in a pan, add the almond paste & sugar
mix well, cook on medium flame, keep stirring
the paste shouldn't change its colour
when the paste starts leaving the sides of the pan, add remaining ghee, keep stirring till the ghee floats on top.
remove, quickly spread on a greased plate, flatten well
when cool, cut into desired shapes & serve.
store in a clean, dry container.
