Carrot MysorePak

 INGREDIENT

besan / gram flour 1 cup

carrot puree 1 cup

ghee 1 cup

oil  1/2 cup

ghee for greasing

METHOD 

roast besan in low flame stirring continuously till raw smell goes. Mix it with oil and keep aside

In the pan add sugar and carrot puree boil till raw smell goes

when it reaches  1 string consistency, lower flame, add besan mixture, keep stirring

add ghee 1-2 tbsp at a time, keep stirring, add more ghee if the previously added ghee is absorbed.

when the mixture leaves the sides of the pan and frothy and bubbles appear on the underside of the mixture  when mixed, it is the right time to switch off the gas and spread the mixture in a greased plate.

keep aside to cool and set, after 15 minutes, cut and leave for it to set.
