The Egyptian recipe for a cake called Basbousa.
For another version of the cake, add to the mix 1 tbsp. turmeric and some almonds or pine nuts, and skip the syrup.
Ingredients for syrup:
Sugar - 1 cup
Water - 1 1/2 cups
Honey - 1 tbsp.
Lemon juice - 1 tsp.
Ingredients for cake:
Semolina - 1 cup
Sour cream - 3.5 oz
Orange juice - 1/2 cup
Vegetable oil - 1 cup
Coconut flakes - 1 cup
All-Purpose flour - 1 cup
Baking powder - 1 1/2 tbsp.
Eggs - 4
Vanilla Extract - 1 tsp.
Orange zest - 1 tsp.
Method of preparing the cake:
Boil the syrup ingredients in a small saucepan over medium-high
flame.
Let boil 3 minutes and remove from flame.
Preheat oven to 320°F. Mix all cake ingredients together in a bowl
until fully combined.
Pour into a greased pan and bake until the cake sets and top becomes
golden- about 45 minutes.
When the cake is done, cut it but don't take out of the pan just
yet.
Pour the syrup over the cake while both are still warm and serve
with cream, vanilla ice cream or bleached almonds garnish.
