Thalipeeth

 thalipeeth recipe 

 Ingredients

½ cup jowar (sorghum flour)
 
¼ cup atta (whole wheat flour)
 
½ cup bajra (pearl millet flour)
 
¼ cup besan (gram flour)
 
¼ cup rice flour
 
¼ tsp ajwain (carom seeds)
 
¼ tsp turmeric pdr
 
¼ tsp red chilli powder
 
½ tsp cumin powder
 
1 tsp coriander powder
 
1 tbsp sesame seeds
 
1 medium onion or ½ cup finely chopped onions
 
1 tsp finely chopped ginger
 
¼ cup chopped coriander leaves
 
1 green chilli– finely chopped
 
1 tsp oil
 
salt as required
 
¾ cup + 2 to 3 tablespoons water or add as required
oil as required for cooking

Instructions for making thalipeeth dough

take all the flours, spice powders, carom seeds, sesame seeds, onions, ginger, green chili, coriander leaves and salt in a mixing bowl or pan.  Add 1 teaspoon oil.  Mix everything very well. Then add water in parts and as required. Begin to mix the dough. Continue to add water in parts and mix everything to a soft and smooth dough. Dough has to manageable, moist and very smooth. Depending on the quality and texture of the flour, you can add less or more water.

Then wet a muslin cloth or a cotton kitchen napkin with water. Wrung the extra water and spread the muslin on the rolling board. The muslin should be moist. Also heat the tawa. Now take a portion of the dough. Roll in your palms and flatten it on the muslin. With your fingers gently press and flatten the dough to get a flatbread with ¼ inch thickness. While flattening you can sprinkle a few drops of water also on the dough. Make hole in the center or make 3 to 4 holes at the sides. This helps in frying the thalipeeth well. Spread a bit of oil on the tawa. The tawa has to hot. So you can keep it on medium to high flame. Regulate the flame as required. Lift the muslin cloth and gently place it with the thalipeeth side touching the tawa. Now carefully peel the muslin from the rolled thalipeeth dough. Sprinkle some oil in the holes as well as the edges. Cover with a lid and let the thalipeeth cook for 2 to 3 minutes or till you the base is golden and crisp. You can brown the base more if you want. Turn over and continue to cook the second side also till you see some brown or charred spots on them. Remove and serve thalipeeth hot. If not serving hot, then you can stack the thalipeeth in a roti basket or casserole, so that they stay warm. Prepare all the thalipeeths this way. Serve thalipeeth with white butter or fresh curd and pickle

Rajgira Thalipeeth

  

 Ingredients

Boil potatoes, peel, mash and keep them aside.
 
In bowl, add singhare ka atta, rajgire ka atta, sendha namak, black pepper powder, red chili powder, ghee, finely chopped green chilies, and add mashed boiled potatoes.
 
Mix all the ingredients well and then knead a soft dough.
 
Now, take a tawa and add a little oil/ghee and take a small ball from the kneaded dough.
 
Spread the ball in hands to make a small roti.
 
With hands just spread evenly and make a roti and place it on the tawa.
 
Shallow fry it with ghee.
 
Serve with boiled fried potatoes, pickles and curd.

 

Sabudana Thalipeeth

  

Ingredients

 

Preparations

Grate the boiled potatoes in a plate.Add soaked sabudana and kuttu atta to it.
 
Add peanuts, grated ginger, green chili, cumin seed, lemon Juice and salt.
 
Mesh the mixture properly to make the dough.
 
Make balls from the dough.
 
Take thick polythene and fold it, apply ghee on the inner surface of polythene.
 
Keep a ball of dough and cover the polythene, start pressing the ball from all sides to make circular shape.
 
Keep a pan on the gas and apply ghee over it and let it heat.
 
Gently put the thalipeeth on the pan (tawa) from the polythene.
 
Let it cook for two minutes and turn it upside down carefully.
 
Now apply ghee on the cooked surface and again turn it and again apply ghee.
 
Cook it until it turns golden brown. 
 
Serve the thalipeeth hot with coconut/  green chutney.

Spinach Thalipeeth

Ingredients

1 cup Whole Wheat Flour
1/4 cup Rice flour
1/4 cup Gram flour / besan
1 cup Spinach Leaves  chopped
1 Onion, finely chopped
1 tsp Cumin seeds 
1 tsp Turmeric pdr
1 tsp Red Chili pdr OR green chili finely chopped
1 tsp Cumin powder 
Salt to taste
Oil to smear

 

Preparations

Add all the ingredients into a bowl and slowly star mixing by adding lukewarm water. Knead it to a wet dough but not sticky.

Cover with a damp cloth and rest for about 10 minutes.

Now to prepare the Thalipeeth, place a non stick tawa/skillet on the heat. Spread out a large piece of plastic, or parchment paper on your work surface.

Grease your palms with oil. Pinch a big ball of dough place it in the centre of the parchment or plastic. Then gently flatten it out to form a hand-patted disc.

Lift the paper, along with the roti on it and turning it over, place it on the skillet with the rotti down on the hot skillet.

Carefully supporting the rotti peel off the paper. Drizzle a little bit of oil along the edges of the roti and in the centre, into the hole made on the roti and allow it to sizzle and crisp up.

When it seems half cooked, flip the roti over with a spatula to cook the other side.

Cook well till you have brown patches on both sides. Then, take the thalipeeth off the skillet, add a dollop of butter or ghee, and serve immediately.

Serve the Spinach Thalipeeth Recipe along with Amla pachadi/ raita, garlic chutney/ pickle, curd for a healthy breakfast.
