Coffee Mousse

 INGREDIENTS

heavy cream  1 cup

sugar 6 tbsp

cocoa pdr  1 tbsp

eggs 4 separated

coffee pdr  2 tbsp

gelatin  1 1/2 tsp

 

METHOD

soak gelatin with 1/4 cup cold water for 10 minutes

separate white & yolk of eggs and keep in separate bowls.

heat the cream in a pan with coffee and cocoa powders on low heat till it dissolves.

don't boil it.

whisk egg yolks and sugar together for some time, pour some hot cream while whisking.

heat the cream again with whisked egg yolks and  heat on low heat, remove and pour in a large bowl

add soaked gelatin to the cream mixture and mix well. keep it aside to cool.whisk egg white in a large bowl till it stands till soft peak forms.

after the cream cool down, mix the egg whites with it with cut and fold method.

set the dessert in small cups or bowls in the fridge for 2 hours

once set and ready to be served, garnish with some grated chocolate, nuts and cherries and serve.
