Coconut Pudding

Ingredients

1 can (13.5 oz) full-fat coconut milk

1/2 cup granulated sugar

1/4 cup cornstarch

1/4 tsp salt

1 tsp vanilla extract

1 cup water 

 

Preparations

In a medium saucepan, whisk together the coconut milk, sugar, cornstarch, and salt until smooth.

Gradually add the water while continuing to whisk to combine.

Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to thicken (about 5-7 minutes).

Remove from heat and stir in the vanilla extract.

Pour the pudding into individual serving cups or a large bowl.

Cover with plastic wrap and refrigerate for at least 2 hours or until set.

Serve chilled, garnished with some chopped nuts and fruits.
