
If you're gluten-intolerant or are willing to keep your diet low in
carbs, try out this mouth-watering casserole. It uses cauliflower
instead of potatoes or pasta, acting as an alternative to baked macaroni
or loaded baked potatoes.
Ingredients
Cauliflower - 2 1/2 cups (cooked)
Sour cream - 1 cup
Cheddar cheese - 3/4 cup (shredded)
Green onions - 3 (finely chopped)
Bacon slices - 3-6 (cooked and crumbled (optional)) *
Salt and Pepper - to taste

Preparations
Pre-heat oven to 350°F/ 180°C.
Chop the cooked cauliflower into small bits.
Mix half of the sour cream, half of the cheddar cheese, half of the
green onions, half of the bacon/ tofu, and salt and pepper.
Combine the
cauliflower with this mixture.
Place everything in a medium baking dish and add the remaining cheese
and bacon/ tofu on top.
Bake for 20 minutes.
Sprinkle the remaining green onions before serving.
