Easy Pizza Paranthas

 Kids love pizzas, the best way to make them eat healthy food is to make it home with healthy ingredients.  Whole wheat flour in place of all purpose flour/ maida. Next adding the veggies kids normally don't eat, the best way is to stuff them in the home-made pizza paranthas.

The veggies choice is yours- capsicum chopped, grated carrot, olives chopped, sweet corn, some finely chopped palak/ spinach  leaves, coriander leaves, grated paneer/ cottage cheese, grated Mozzarella cheese. I prefer to use chopped green chilies, as it contains Vitamin C, fiber. You can use those green chilies not spicy, or remove the seeds and chop OR add little chili pdr.

Ingredients

whole wheat flour as needed to make dough

capsicum finely chopped as needed

sweet corn kernels as needed

coriander leaves finely chopped 2 tbsp

green chilies chopped to taste OR chili pdr to taste

grated carrots as needed

olives- green n black finely chopped

spinach leaves finely chopped 1-2 tbsp

grated paneer/ cottage cheese as needed

salt to taste 

Mozzarella cheese as needed

ghee to cook the parantha- pizzas 

 

Method

knead the wheat flour like you normally do for parantha with little oil and salt, cover and rest while you prepare the veggies.

Mix all the veggies, with paneer, coriander leaves, cheese well.

roll out the roti about 5" in diameter roughly, roll the 2nd one to the same size.

The trick of making it is put the rolled roti over a big katori / bowl smaller than the size of the roti.

Put enough stuffings in the roti, cover with the 2nd roti, press the sides well

then invert it on the board/ kitchen top, press with the bowl so it gets cut into a round shape.

remove the excess dough and add to the remaining dough to make more in the same way.

Now heat a tawa/ pan . Once hot, reduce heat to medium, smear some ghee and put the small pizza-parantha carefully  to cook. Once the bottom turns brown, flip over, lightly press the other side to cook well, adding more ghee if needed to get it crisp.

This will be a sure hit with your kids, when you can be 100 % sure that thy'ld eat their lunch in school and return happily, asking if they can have some more pizza-parantha at home !
