First up, let’s crack those eggs into a bowl. Sprinkle in some salt and pepper to season, and whisk it all up until it’s smooth and perfectly blended.
Get your fillings ready. If you’re using tofu, mushroom or veggies, make sure they’re all finely chopped to a similar size.
Time to mix in your fillings and the cheese into the egg mixture, giving it a good stir to make sure everything’s evenly spread out.
Now for the fun part! Pop your tortilla into an 18cm air fryer basket tray (or big baking tray for about 10 minutes. You’re looking for a golden brown and crispy tortilla, and an omelette that’s cooked to perfection.
Once everything’s done, lift out the tray carefully, garnish with some chopped spring onions and coriander leaves if desired, cut and serve hot !
