These pancakes are super easy to make and are also very healthy, nutritious and rich in protein. Korean pancakes are made with all purpose flour but I used chickpea flour to add protein. Ingredients:
- 1/4 cup all purpose flour or chickpea flour
- 1 cup veggies of choice – carrots, cabbage, bell peppers.
- salt and pepper
- 1/4 cup water
Method
Take a grater and grate the vegetables. Mix all the ingredients in a bowl and pour it on a well greased pan. cook for 2-3 mins, flip and cook for another 2 mins or until crispy. Serve with a tomato ketchup or your favorite dip.
