Ingredients:
3 ripe bananas, mashed
1/2 cup crushed pineapple, drained
1/2 cup coconut flakes
1/2 cup chopped macadamia nuts
2 large eggs
1/2 cup unsalted butter, melted
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
Directions:
Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
In a large bowl, combine mashed bananas, crushed pineapple, coconut flakes, and chopped macadamia nuts.
In a separate bowl, whisk together eggs, melted butter, and vanilla extract.
Add the wet ingredients to the banana mixture and stir until well combined.
In another bowl, whisk together flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
Allow the Hawaiian Banana Bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
