Indian Ice Cream (Kulfi)

 🍦 Indian Ice Cream (Kulfi)

Ingredients:

🥛 4 cups whole milk
🍚 1/2 cup sugar
🌾 1/2 teaspoon cardamom powder
🥜 A handful of mixed nuts (almonds, pistachios), finely chopped
🍯 A few strands of saffron (optional)


Directions:

1️⃣ In a large, heavy-bottomed pan, bring the milk to a boil over medium heat. Once boiling, reduce the heat to low and simmer, stirring regularly, until the milk is reduced by half. This process will take about 1-2 hours, and the milk will thicken and change to a light caramel color.

2️⃣ Add the sugar, cardamom powder, and saffron (if using) to the reduced milk. Continue to simmer for another 10-15 minutes, stirring frequently until the sugar is completely dissolved and the mixture thickens slightly.

3️⃣ Remove the pan from the heat and allow the mixture to cool slightly. Then, stir in the chopped nuts.

4️⃣ Pour the mixture into kulfi molds or any small container. Cover with plastic wrap or aluminum foil and freeze until set, usually 6-8 hours or overnight for best results.

5️⃣ To serve, warm the outside of the molds slightly by dipping them in warm water for a few seconds. Then, gently unmold the kulfi onto a plate.
