Banoffee Tres Leches Cake

INGREDIENTS


1¾ cup flour
1 cup brown sugar
1 cup desiccated coconut
2 heaped tsp baking powder
¼ tsp bicarbonate of soda

melted butter (made with 250g butter)
3 extra large eggs
1 cup sour milk / plain yogurt / buttermilk
2 tbs vanilla essence
3-4 very ripe medium sized bananas

METHOD:

Mix first 5 dry ingredients together in a large bowl. Blend next 5 ingredients in a blender. Mix both together until smooth. Bake in a greased 20x25cm baking dish in a preheated oven at 180°C for ±30 mins or until a skewer comes out clean when tested. Cool completely. Then pour sauce over.👇

Tres Leches Sauce

1 can evaporated milk
1 can caramel treat
1 can fresh cream / fresh milk (use the evaporated milk can to measure)

Mix together properly then pour over completely cooled cake. Refrigerate overnight. Then top with caramel whipped cream.👇

Caramel Whipped Cream

3 cups whipping cream
½ packet powdered caramel pudding mix

Beat together until soft peaks form - slightly thick but not runny.
