INGREDIENTS
3 cups all-purpose flour / maida
1 ½ cups mayonnaise
1 ½ cups sugar
⅓ cup unsweetened cocoa powder
1 ½ cups water
2 ¼ tsp baking powder
1 ½ tsp baking soda
1 ½ tsp vanilla extract
Frosting (store-bought or homemade)
METHOD
Preheat your oven to 350°F (175°C). Grease two 9-inch round baking pans with non-stick spray and set them aside for later.
In a large mixing bowl, combine the all-purpose flour, sugar, cocoa powder, baking powder, and baking soda. Stir these dry ingredients together until they're well mixed. Then, add in the mayonnaise and stir until the mixture becomes evenly combined.
Pour in the water and vanilla extract into the bowl with your other ingredients. Mix everything together until the batter is completely smooth and free of lumps. Then, evenly distribute the cake batter between the two prepared baking pans.
Place the pans in the preheated oven and bake for about 30 to 40 minutes. You'll know the cakes are done when a toothpick or cake tester inserted into the center comes out clean, without any wet batter.
After baking, allow the cakes to cool down completely. Once cooled, place one cake layer on your serving plate. Spread a generous layer of your chosen frosting over this bottom layer. Then, carefully place the second cake layer on top and finish by covering the entire cake with the rest of your frosting.
