INGREDIENTS
maida 4 tbsp
suji/ rava 4 tbsp
rice flour 4 tbsp
curry leaves 15 sprigs
green chilies 4-5
jeera 1 tsp
pottukadalai ( fried dal) 2 tbsp
salt to taste
ghee 2 tbsp
oil for frying
hing little
ajwain / carom seeds 1 tsp
METHOD
in a mixer jar, use small one, add curry leaves, chilies, grind without adding water, add pottukadalai, powder again to a smooth one
In a big bowl, add maida, rava, rice flour, add ghee, mix well
add the ground mixture, salt, ajwain, salt mix well
add water enough to make a soft dough like for roti
make small balls, dust with flour - maida/ atta/ rice flour, roll into thin puri
heat oil, once hot, on medium flame, fry till brown on both sides, drain on kitchen towels, cool and store.
Earlier, I used to make small balls, then in small aluminum foil, flatten it with fingers, then tried to roll in with a rolling pin, like we do for roti / puri, it was easier.
ps- you may omit curry leaves, just powder pottukadalai with red chilies or peppercorns and add to the flours and proceed in the same way. Since I normally used to do like that, wanted to try a different taste. It is healthier, as curry leaves are rich in Vitamin E, green chilies are rich in Vitamin C !
