Ingredients
½ cup oat flour (store-bought or make it yourself by popping oats in a blender)
2 Tbsp. flaxseed pdr
1 cup low-fat cottage cheese/ paneer
1 tsp. vanilla extract
¼ tsp. cinnamon pdr
2 large eggs
1 tsp. baking powder
2 tsp. oil

Preparations
Crack the eggs into a blender. Add the oat flour, ground flaxseed, cottage cheese, vanilla, cinnamon, and baking powder and blend on high until smooth.
Add half of the avocado oil to a nonstick pan or griddle and heat over low to medium heat for a minute or so, or until the oil moves freely around the pan but isn’t bubbling.
Turn the heat to low and add a scoop of pancake batter (approximately ¼ cup) to the pan. Cook until the edges are dry and pulling away from the pan, then flip. Repeat with the remaining pancake batter. Oil the pan with the remaining avocado oil about halfway through, if needed.
Serve with berries and a light drizzle of nut butter or maple syrup.
