Quick and Easy Apple Galette

What is the difference between a pie and a galette?
A galette is a free-form pie that is made, not in a pie dish, but on a sheet tray. One single layer of pie dough is rolled out into a large circle and generally topped with a fruit filling, like apples or blueberries.

It’s flaky, juicy, loaded with sweet apples, and takes just an hour to prep and bake. And unlike a pie, you don’t need any culinary skills to ensure it comes out looking and tasting great. Not to mention, with less than 3 grams of added sugar and 5 grams of protein per serving, it’s also somewhat nutritious—in terms of desserts, at least.

Ingredients

1 sheet puff pastry, thawed

¼ cup almond butter

¼ cup 2% plain Greek yogurt

1½  tsp. + 1 tsp. honey, divided

3 medium apples

1 tsp. lemon juice

½ tsp. cinnamon pdr

2 Tbsp. all-purpose flour

1 tsp. vanilla

1 egg

 

Preparations

Preheat the oven to 400° and line a baking tray with parchment paper.

Spread the puff pastry sheet over the baking tray.

Mix the almond butter, Greek yogurt, and 1½ tsp. honey in a small bowl. Using a spatula, evenly spread the mixture over the puff pastry, leaving a 1-inch border around the edges uncovered.

Cut the apples into wafer-thin slices and place in a medium mixing bowl.

Add the lemon juice, remaining 1 tsp. honey, cinnamon, all-purpose flour, and vanilla to the mixing bowl and toss to coat.

Spread the apples on top of the almond butter mixture and fold the uncovered edge over the apples to form a circle. Trim the puff pastry, as needed, to create an even border all the way around.

Lightly beat the egg and, using a pastry brush, brush the pastry with the egg wash./ milk wash

Place the galette on the top shelf of the oven and bake for 40 minutes or until the pastry is golden brown.
