Ingredients
1 sheet puff pastry, thawed
¼ cup almond butter
¼ cup 2% plain Greek yogurt
1½ tsp. + 1 tsp. honey, divided
3 medium apples
1 tsp. lemon juice
½ tsp. cinnamon pdr
2 Tbsp. all-purpose flour
1 tsp. vanilla
1 egg
Preparations
Preheat the oven to 400° and line a baking tray with parchment paper.
Spread the puff pastry sheet over the baking tray.
Mix the almond butter, Greek yogurt, and 1½ tsp. honey in a small bowl. Using a spatula, evenly spread the mixture over the puff pastry, leaving a 1-inch border around the edges uncovered.
Cut the apples into wafer-thin slices and place in a medium mixing bowl.
Add the lemon juice, remaining 1 tsp. honey, cinnamon, all-purpose flour, and vanilla to the mixing bowl and toss to coat.
Spread the apples on top of the almond butter mixture and fold the uncovered edge over the apples to form a circle. Trim the puff pastry, as needed, to create an even border all the way around.
Lightly beat the egg and, using a pastry brush, brush the pastry with the egg wash./ milk wash
Place the galette on the top shelf of the oven and bake for 40 minutes or until the pastry is golden brown.
