How to retain the green colour of Spinach

 After cleaning the leaves, wash it well. Boil plenty of water with salt and baking soda depending on the quantity roughly 1/4 tsp. Once the water boils, drop the leaves in boiling water, stir well, count to 10, drain the water and immerse in cold water or keep the colander under the tap with running water, till it feels cold, then you can chop  or make puree, it will remain green instead of getting darker.
