Protein rich- Mushroom & Ricotta Toast
Ingredients:
2 slices sourdough or rustic bread, toasted
3/4 cup mushrooms sliced
1/2 cup ricotta cheese / cottage cheese
1/2 cup baby spinach
1 clove garlic, minced
1/2 tbsp olive oil
Salt & pepper to taste
Optional: chili flakes and fresh coriander leaves for garnish
Instructions
Heat olive oil in a skillet over medium
heat. Add garlic and mushrooms. Cook for 6-8 minutes until mushrooms are
browned and tender. Season with salt, pepper, and chili flakes if
using.
Toast the bread slices until golden and crisp.
Spread a thick layer of ricotta on each slice. Add a small handful of arugula, then top with warm sautéed mushrooms.
Sprinkle with fresh parsley or extra chili flakes if desired. Serve warm and enjoy!
