Spinach- beet- dry vege

As I read it is important to use beets in some form in our diet daily, as it is good for heart, if you're anemic, iron deficient, diabetes, prevents plaques,

Ingredients

spinach 1 bunch

beet grated / finely chopped 1 tbsp

onion 1 finely chopped

tomatoes 2 finely chopped

green chilies 1-2 finely chopped as per taste

salt to taste

potato 1 big boiled and finely chopped

turmeric pdr 1/4 tsp

salt to taste

red chili pdr to taste

garam masala 1/2 tsp

saunf ( fennel seeds) 1/2 tsp

jeera/ cumin 1/2 tsp

oil 2 tsp

baking soda

 hing little

 garlic finely chopped 1 tsp

 coriander pdr 1 tsp

Preparations

clean the spinach, wash, blanch adding salt and baking soda to the boiling water and puree it.

In a pan/ kadai heat oil, add jeera and saunf, once you get the nice aroma

add hing followed by garlic, green chilies, onion, add little salt, fry till light brown

add tomatoes, fry till tomatoes are soft

add turmeric pdr, red chili pdr, coriander pdr fry well

add chopped potatoes, beet, fry covered for 2 minutes adding garam masala pdr

remove the lid, add spinach puree, salt to taste, switch off the flame and mix well

as the pan is hot, spinach being pureed will cook well in the heat itself.

Serve it hot with rice, roti or on top of toasted bread, as it will be very filling.

I also added some chopped nuts, which is optional.
