Ingredients and Prep
sabudana 1 cup wash well, soak in just enough water for 2-3 hours, once soft, drain well
peanuts 1/2 cup roasted and coarsely crushed ( you may reserve little peanuts for topping)
Mix the sabudana and crushed peanuts well and keep aside
potato 1 big boiled finely chopped
onion 1 medium finely chopped optional
green chilies 2-3 finely chopped as per taste
salt to taste
ginger 1 tsp finely chopped
mustard seeds 1/2 tsp
jeera 1/2 tsp
hing little
oil 1-2 tbsp
coriander leaves finely chopped 2 tbsp
In a bi pan/ kadai, heat oil, add mustard and jeera, once it crackles, add ginger, green chilies , hing and fry well
add onion if using fry till transparent, add chopped potatoes, mix well
let the potatoes get slightly crisp
add the sabudana -peanuts mixed with half the quantity of the coriander leaves and salt , mix well
cover and cook for 2-3 minutes, mix well, garnish with remaining coriander leaves and serve hot with some crushed peanuts on top.
