Potato Cups with healthy filling


 Ingredients and Prep

Boiled and mashed  potatoes 3 big

cornflour 1 cup or as needed

salt to taste

add cornflour  to the mashed potatoes, along with salt, knead well, rest till you make the filling

Filling 

Heat 1 tbsp oil

finely chopped onion 2 

garlic clove 1 finely chopped 

carrots grated 2 medium

mushroom 2 chopped fine

salt and chili flakes 

Heat oil in a pan, add onion garlic fry till transparent, add grated carrots, mix well

cover and let it cook till soft

add chopped mushrooms mix well

add salt and red chili pdr to taste, mix well, cook for 2 minutes remove.

in a big bowl add thick curd, add the vegetables along with freshly chopped coriander leaves, mix well

make small balls of the potato mixture

grease you palms well, also grease the citrus fruit hand juicer, press the potato dough on top, you'll get a nice curved shape 

DON'T WORRY, YOU DON'T HAVE A CITRUS JUICER TO DO BY HAND, just make small cups with the dough, by pressing on the back of small cups/ katoris, fry the cups in medium hot oil till golden and crisp

drain well and remove

beat the curd, add the vegetables, coriander leaves mix well

put a tbsp of filling on each cup and serve as an appetizer. 

 

NOTE- you may cook whatever vegetables the family likes, mix with hing curd and season as per your taste and fill the cute cup and win hearts !
