lightly grease them with non-stick oil spray. Set aside. Combine the all-purpose flour, baking powder, salt, and cinnamon pdr in a medium mixing bowl. Whisk well and set aside. In a large mixing bowl, whisk together melted butter, dark brown sugar and vanilla. Mix until combined. Add milk and apple cider vinegar, and whisk until well combined. Now, add the dry ingredients to the wet and stir until just combined-do not over-mix. Then, gently fold in the peeled and chopped apples. Use a spoon to divide the batter evenly between the muffin tins. Fill each muffin tin up to the top. Bake the muffins for 5 minutes at 425°F (220°C), then reduce the temperature to 350°F (180°C) while they are still in the oven. Continue baking for another 14-16 minutes or until the cake tester inserted in the center comes out clean. Remove
the muffins from the oven and let them cool in the pan for 5 minutes.
Then, transfer them onto a cooling rack and let them cool completely. NOTE- Filling the Muffin Tins: For tall muffin tops, fill
the muffin tins to the top. This will ensure that the muffins rise well
and have nice domed muffin tops. Cinnamon Sugar: These moist apple muffins are
delicious as is, but the cinnamon sugar topping adds more flavor and
deliciousness. You can skip it or top the muffins with sparkling sugar.
