Preparations
Preheat the oven to 200’C. Grease the baking tray lightly and keep aside.
In a mixing bowl, mix all the dry
ingredients together, maida, baking powder, baking soda, cinnamon,
nutmeg, and salt and mix well.
In another mixing bowl, add the ghee,
eggs, and vanilla essence along with the brown sugar. Whisk everything
very well to form a smooth mixture.
Now add the dry mixture into the ghee mixture in batches, mixing well each time.
Once the mixture is well combined, add
the rolled oats and add raisins if you like. Mix it lightly.
Using an ice cream scoop or a large
spoon, scoop out the cookie batter on the baking tray. Very gently
flatten them slightly. Make any design if you like.
Insert the tray into the oven and bake for 10-12 minutes or until the cookies appear golden.
Remove them from the oven, cool them and store in an air-tight container.
