CASHEW NUTS IN SPICY GRAVY

INGREDIENTS

oil 1 tbsp
onion finely chopped  1 cup
chilli pdr. 1 tsp or to taste
salt to taste
turmeric pdr to taste
cumin  1 tsp
ginger-garlic paste  1 tsp
cashew nuts halved  1/2 cup
water 1 cup
coriander leaves finely chopped   2-3 tbsp
hing/ asafoetida   1/4 tsp

METHOD

in a pan/ kadai, heat oil, add cumin, once it crackles, add hing
onion, paste, fry well, till onion is light brown in medium flame, stirring from time to time
add turmeric pdr., salt, chilli pdr., cashew nuts, fry well for 2 minutes
add water, let it simmer for about 5 minutes, adding 1/2 of the coriander leaves
once you see it boiling well & oil floating on top, remove
serve hot garnishing with the rest of the coriander leaves with rice/ pulao/ bread.
