INGREDIENTS
oil 3 tsp
ginger-garlic paste 1 tsp
green chillies finely chopped 1 tsp or to taste
spring onion chopped 1 cup
button mushrooms finely chopped 1/4 cup
capsicum finely chopped 2 tbsp
cooked corn 2 tbsp
roasted peanuts 3 tbsp
fried paneer/ cottage cheese 3 tbsp
tomato sauce 2 tbsp
pasta sauce 2 tbsp
salt to taste
cooked pasta 100 gm
pepper pdr. to taste
spinach/palak puree 1/2 cup
orange juice 2 tbsp
mixed herbs 1/2 tsp
METHOD
heat oil in a big pan, add ginger-garlic paste, green chillies, fry for 2 minutes
add spring onion, capsicum, saute for 2 minutes
add corn, 2 tbsp each of peanuts & paneer, along with tomato & pasta sauce, mix well, cook for 2 minutes, add spinach/ palak puree, orange juice, salt & pepper pdr. mix well, cook for a minute
add pasta, cook in low flame till the masala gets well coated.
to serve, garnish with rest of the peanuts, fried cottage cheese, those who love cheese, may grate some cheese on top, as with the heat, it will melt, tomato slices.
sprinkle crushed herbs on top.
