INGREDIENTS
leftover idlis 6-8, cut into strips or small bits
onion 1/2 cup finely chopped
green chillies 1 tsp finely chopped or to taste
oil 2 tbsp
hing 1/4 tsp
udad dal 2 tbsp
chana dal 2 tbsp
curry leaves 1 sprig, finely chopped
mustard seeds 1 tsp
capsicum finely chopped 2 tbsp ( optional)
tomatoes finely chopped 2 tbsp ( optional)
coriander leaves finely chopped 1 tbsp
ginger finely chopped 1 tsp
milagai podi ( gun powder as some call it !) 2 tsp
salt to taste ( little, as idli has salt, also milagai podi)
METHOD
heat oil in a heavy pan, add mustard seeds, once it crackles, add the 2 dals, curry leaves, curry leaves, ginger, chillies, fry well till the dals turn light brown
add hing, onion, fry till onion turns light brown
those who want to add capsicum & tomatoes, add it, fry well
add idli pieces, fry well, add salt as needed, keep on low flame covered, adding little coriander leaves for about 3-4 minutes, stir, if you prefer it still browned, add little more oil, keep it covered & cook for few more minutes
serve hot garnish with milagai podi & coriander leaves
